grilled pizza is great when done correctly. i bought a special attachment thing for my Big Green Egg that allows me to grill pizza at temps ~800 degrees.
the egg is the most awesome thing in the entire world imo. but i really wanted to learn how to smoke stuff, that's why i got it. if you're not interested in getting into that then i would just stick with what you have. you can use the egg to smoke or grill, with temps from 150 to 1000. i've grilled pizza, steak, and lamb on it. i've smoked pork shoulder (pulled pork), brisket, chicken, fish- salmon and halibut, jalapeno poppers, back ribs, spare ribs...ohhh I smoked my thanksgiving turkey on it, and i've smoked a few beef tenderloins, and some racks of lamb. i'm sure i'm forgetting something but those are all in my regular rotation. i got mine last winter and smoked all last spring/summer/fall, just about every weekend. this season I've had it up smoking 4 times or so.
like i said, i wouldn't buy it just to use for grilling, it's real strength is it's use as a smoker. to me, a grill is a grill is a grill.
I have a medium egg, cost about 700 and the stand was another 100. I dropped like 2.5 paychecks on this thing and was broke for a whole semester, totally worth it

600 is just about perfect. what you're wanting to do is evaporate the water out of the dough as quickly as you can, this leads to a crispier crust. here's a good walk through- notice how they grill the crust, flip it, then top it. that's the easiest way to get down with it your 1st timeHow high for heat? Just threw on some Jiffy pizza dough at about 350. When you think you're able to flip it, do it. After you flip it, throw the toppings on and bake (close top) until cheese melts and it's not burned. I threw on mozzarella slices, pepperoni, pine nuts, garlic, and banana peppers. Basically whatever i could find. Will try a pesto pizza this weekend.

If there is a pepperoni or sausage or something on the menu I can't not order it. I hate thick, chewy crusted pizza that isn't intentionally thick crust. Like, if I know I'm going to eat a chicago style pizza I can deal with it. But, if I order a regular pizza from some place and it is all chewy and thick crusted I get grossed out.Yes, agreed.

not sure i agree with that. the grease from the fresh mozzerella mixing with the sweetness of the san marzano tomatoes is something to behold. it's when you get the load of grease from all the meats, that's when things get fux0red up.

you guys need to invest in a good food processor or kitchen aid blender, so useful outside of just making dough.
i missed those pics, nice work sd. it's hard to cut that fresh mozz thin but try to using a sharp steak knife. also, it looks like you didn't close your grill when you were cooking? it's important to so you can get the convection going.

try not cooking the dough first since your grill seems to run pretty hot (which is a good thing) - put the corn starch down on your pizza paddle, then the dough, then sauce it cheese it, etc, then slide it on the grill without cooking the dough first.Didn't cook it first. Just threw it on there. I threw it on raw and topped it after I flipped it 2 minutes in. Probably why our mozz didn't melt very much also
if your dough is wet, keep adding flour until it's just past being sticky. i used to do it without the stand mixer and would stir until i broke the wooden spoon and then kneed, adding little bits of flour throughout until i got the dough to a consistency where it's soft but not too soft where it doesn't hold it's shape when you poke it. when you poke it, it should come back out to shape it was before being poked. it shouldn't be sticky when you let it rise.Will def. do this

keep the oil/garlic separate from the sauce (pure tomato) and drizzle it on instead. raw garlic is better than sauteed, imo. you can grind up a bunch with salt and olive oil till it's a paste and freeze it. then just scrape out a little when needed and mix w. more olive oil for pizza drizzling.
the frozen garlic paste is good for cooking other stuff too. hate peeling/chopping garlic, so it's nice to do about a 3 month supply at a time.

There is bad pizza out there. Pizza hut isn't very good, but I'll eat it when they bring it in for work. The worst pizza I've ever had that I didn't eat all of it because it was disgusting is Zepi's pizza. They opened a new one at K-10 and Ridgeview in Olathe. Horrible. Plus it's like an ice cream parlor also? Kind of weird. Pizza is disgusting. Do not go there.

There is bad pizza out there. Pizza hut isn't very good, but I'll eat it when they bring it in for work. The worst pizza I've ever had that I didn't eat all of it because it was disgusting is Zepi's pizza. They opened a new one at K-10 and Ridgeview in Olathe. Horrible. Plus it's like an ice cream parlor also? Kind of weird. Pizza is disgusting. Do not go there.

I have literally nothing to add to this. It's all been covered. I just simply couldn't let a pizza thread go on without posting. It's a conversation rule of mine, but it also translates to message boards.
FACT: Even "awful" pizza is better than roughly 79 percent of all other food at its best. Once you start adding fruit, (namely pineapple), to the equation, though, the number drops down to something closer 71.
The long and short of those numbers is as follows:
If you see something that even somewhat resembles pizza. Put it in your mouth. Odds are you won't be sorry.

just got my stone yesterday. anybody experienced with these? pretty confident on the breads and pizzas in the ovens, but I am wanting to try it out on my charcoal grill. You see that SOB in my pic? About 1 minute per side. It is a frantic dance of near disastor to flip and get the toppings on before it turns to a fireball. I am going to try direct heat on the first side to bubble it up and then flip onto the other side of the grill with no heat next time I do it to more slowly finish it (about 5 minutes I would imagine).

It was not good. Much worse than the Bronx. I'd put Papa Keno's higher. Pizza 51 as well. All are better thin crust alternatives that are ordered by the slice.

When I was a young cat I worked at a little caesars. For me this was basically an every-day-after-school-all-you-can-eat buffet where they actually paid you minimum wage to make and eat anything you could imagine.
The creation I was most proud of (and still am) was a pizza with a totally nacho cheez stuffed crust. It was a thin crust in a pan, with a half inch layer of nacho cheese then another thin crust on top of which was topped as an ultimate mega supreme pizza (extra bacon). This was the best pizza I have ever eaten. 6 months later Dominos actually came out with a nacho cheese filled crust pizza. This can only have been the result of corporate espionage.
From now on I will patent world changing inventions.

Bagel Bites are good, but they dont hold a candle to pizza rolls. Just IMO.
Also, NiMarco's in Flagstaff was very good. Stopped there with bubbles and MiegeCat on the way to the Grand Canyon based on my parents' recommendation from when 8mompick was a grad student there in the mid 80's and it was still great.

Also, its like half price pizzas on Sundays. (I've only had it at the Lees Summit location, no idea if its any different than the other location.)

if you like their pan pizza a lot then you will like these. there is that type of crust in basically every bite. i haven't decided whether i feel like there's enough bang for the buck yet though. feels like they're cheating a little bit in terms of pizza per square inch of the box.

in over all square inches of pizza, it's probably pretty similar to a large pizza. however, as 8mp said, there is much more crust, and far less sauce/cheese/toppings per square inch than a regular pizza. i would definitely advise having a dipping sauce available for all of the crust that you will be eating.
if large pizzas were still 10 dollars, it wouldn't be a contest, go with the large pizza. but with large pizzas costing a little bit more, i'm a little torn as to what the better value is.
Johnny Jo's Pizzeria on 47th and Liberty in KCMO is now the best pizza in KC.

johnny jo's has fallen out of favor with me since i first started eating there. gotta be honest with you pizza bros, a few times it sucked. then i was like, eff that crap- i'm not walking over there for a pie if it's going to suck so i quit going. then they closed, then they reopened. who knows, bros but be careful with Johnny Jo's because you just don't know what level (1-10) pie that he's going to give you. once it will be a 10, next time a 3, skip ahead a few times then it's a 4, then a 1 then another 10 and an 8. still have his magnet on my fridge though- ol' time's sake i suppose :D

Making first pizza at home tonight after spending 20 min reading this thread at the end of work. I'm trying a bunch of stuff and basically splitting it into quadrants. Using store bought thin crust dough, cheese is a mix between mozzerela and 4 cheese italian blend.
Half basil pesto, half red sauce.
Half Anchove, half pepporoni
Fresh basil and garlic sprinkled throughout along with Green Peppers, onions, mushrooms and japs.
Picture and reviews will come later tonight

Pizza price is based off how much cheese and toppings are used, not dough/crust. Cheese is the single biggest expense at any pizza place. Dough is super cheap, especially at places that make their own. Sauce is pretty cheap too. If you're into saucy pizzas, most places will give you extra sauce for free.

Pizza price is based off how much cheese and toppings are used, not dough/crust. Cheese is the single biggest expense at any pizza place. Dough is super cheap, especially at places that make their own. Sauce is pretty cheap too. If you're into saucy pizzas, most places will give you extra sauce for free.

skim milk is the tastier and more sensible option, unless you're concerned about ovulation.

Pizza Hut doesn't. I know for a fact that Little Caesars does - used to work there and hated making dough. It was by far the biggest pain in the ass. I think Papa Johns makes their own too.

Did you hate making dough as much as I did? Half of what pissed me off about it was that you had to be 18+ to work the machine (which I was) and a lot of the time I'd be one of only two employees in there who weren't minors so I'd get mumped into making dough while everyone else was doing way easier stuff for the same pay.

I think I'm going to open up a store right next to Papa Murphy's with nothing except a bunch of ovens and chairs where I promise to cook the pizzas and charge super low prices for the meals.
I can call it Papa Dlew's Pizzeria: bring your own ingredients!

I'm going to put another slice of bread on top in the spirit of papa murphs authentic chicago stuffed za.

I just looked up the FDA's guidelines, and it turns out I was WRONG. Alcoholic beverages not made from barley and hops are not classified as malt beverages and thus are not subject to the same advertising restrictions. It turns out that gluten free beer can legally be considered beer, and for that, I apologize.

so i had little caesars for the first time since high school last night. got a hot n ready deep dish. Nothing is quite like little caesars deep dish or crazy bread. i got super pissed off though because they no longer have tubs of nacho cheese.I always grab one of these bad boys whenever I go over to the folks on Sundays. here is the uncensored truth.
you start with a ball of dough the same as all the other balls of dough for the respective pizza sizes. after the dough has risen at least to the minimum level, you prepare a square pizza pan of somewhat smaller area than the respective size round pizza by squirting about a cup of partially hydrogenated garlic butter sauce into the pan. you then take the pizza dough and press it into the square garlic butter soup to fill the pan. next you brush the top of the dough with more garlic butter sauce and put it in the fridge for at least 24 hours to absorb it all.
then you sauce, cheese, top and cook to order!
what a special process! I think pizza hut is somewhat similar but i cannot confirm.

thanks, that's a pretty straight forward dough. i like to bake and have been working on my dough recipe for about a decade.cdubs - let's talk about your dough recipe
DOUGH INGREDIENTS
2 1/2 teaspoons rapid rise yeast (1 packet)
1 cup warm water
2 1/2 cups all purpose flour
2 teaspoons honey
1 teaspoon salt
2 tablespoons olive oil
In a large bowl, combine water and yeast and stir until the yeast is dissolved. Add in flour, honey, salt, and olive oil and use a wooden spoon to combine. Once the ingredients are well combined with the spoon, use your hands to knead the dough for a few minutes. Form the dough into a ball, and let it rest for 10 minutes. Pre-heat your oven to 450 degrees and spray a 16 inch pizza pan with non-stick cooking spray. Roll the dough out into a 16 inch circle. Roll the edges of the dough. Combine 2 tablespoons olive oil with Italian seasoning and brush the entire crust with this mixture. Place the crust in the oven for 8 minutes. Remove from the oven and add sauce, cheese, and toppings. Return the pizza to the oven for 10-12 minutes, or until the crust is crispy and the cheese is melted. Cut into slices and enjoy!

*I mix it in a ninja blender, takes about 10 seconds
*Definitely do the 8 minute pre-cooked on this crust if making a pizza, but obviously not possible for calzones. It came out slightly doughy on the calzone crust, but a few extra minutes should solve that.
*This isn't anything special, but it's a tasty homemade dough for sure.

this is good pizza. i went with the pepperoni for $6.75. just because they offer you "tuscan chicken" doesn't mean it goes on a pizza. they offer crap like that at pie 5 because they deal with pizza n00bs there.
anyway. for those of you pizza realists that are still reading, the sauce is made in house with san marzano tomatoes. the crust is made in house as well. none of this cheese blend bullshit you find at other places, pizzaria locale rolls strictly with fresh mozzarella (never frozen). the pizza is about 12" around. they offer shakers of red pepper, oregano, and bottles of olive oil as the accoutrements. same drink selections as chipotle.
i also got a budino (butterscotch pudding with chocolate and caramel topping) for $1.50.

Clams, that looked fantasticit was really good. the pic kinda doesn't do it justice because it makes it look a little cold. it took about 5 mins to cook from the time i ordered and it came out piping hot with that orange grease all over that we all love. the cheese was melty and delicious.

Not sure how much of a difference it makes. It's 14" x 14" and 1/4" thick. At 16 lbs, the thermal mass should be sufficient to avoid much temperature drop in the steel. I'll report back Sunday hopefully.

Buttermilk ranch dipping sauce put it over the top.

Cheese is Japanese pizza cheese blend, basically the only cheese in the grocery store. Toppings: cooked up pepper, onions, and garlic, prosciutto and like dried snack salami (closest thing to pepperoni I could find).

You should try it. It's pretty good! (Not out of the freezer aisle). Kind of like a square pan pizza that crisps up nicely around the edges.

i do find it interesting that puni apparently starts his rectangle pepperoni toppings by putting a single one in the corner and then whatever fits in the space next to it diagonally and so forth and so on. personally, i would just go across horizontally like 99% of other normal functioning humans. i'm pretty sure he started at the top right corner and went from there.

no. he went north-south (as pictured) in a 7-6-7 repeating pattern. things got ugly when he tried to remove the pizza from the pan it cooked in and the bottom horizontal row slid south.
