I watched something a while back that indicated they added quick oats to the meat which affects the consistency.  I have not tried it at home yet to confirm.

I've been mourning Taco John ever since I left Kansas. Can't really remember much about their main food, but the potato ole's (dipped in nacho cheese sauce) alone make me tremble to think about.

Funny story a professor at kstate had never been to Runza and was in Lincoln with 25 African visiting scholars from throughout the continent and he took them to Runza and it was universally considered the worst meal they had in America. Thank you for reminding me of this funny story.
