how often do you guys make tacos? not talking about fancy tacos, i'm talking about mom's tacos- ground beef, some sodium filled seasoning, sour cream, lettuce, pace, cheese, etc?

i make mom's tacos once a week. tonight! let me give you my view of the taco world-
la tiara shells, 18 pack
pace hot picante
daisy squeezable sour cream
80/20 ground beef
mccormick hot taco seasoning
4 mexican cheeses shredded
i used to do lettuce but it's kinda a pain in the anus
will discuss my gourmet tacos later

cube up pork shoulder, burn in oiled Dutch oven, add onions/japs/squeeze in a bunch of limes (important!), add garlic, random chiles/spices and crap, some stock if i have it laying around, let it chill for a few hours but don't let it get quite fall apart'y. then normal taco stuff (CILANTRO, onion, queso fresco sometimes)

seer that crap in some oil in a dutchy
now throw it in a crock pot. heat level LOW.
if you haven't plugged in your crock pot yet now is the time to do it.
now smash up a can of chipotles and adobo
now smush out about 6 limes worth of lime juice
now dump a bunch of seasonsing in it (ground clove, oregeno, cumin, salt, pepper)
now dump in a cup of stock (beef, chicken, whatever)
now dump in like a half cup of cider vinegar
now blend up all that stuff after the crock pot part in blender and dump it on the meat
now throw in like 5 bay leaves
let it sit in that thing for like 8 hours
don't eat the bay leaves you stupid animals

Love the daisy squeeze. Best part about tacos is you can mix and match.
I always have the regular fixings lettuce, tomato, onion, japs, cheese, a couple of taco sauces, sour cream. Rarely are two tacos on my plate the same.

I make white people tacos 2 or 3 times a month. Usually crispy, sometimes soft. But get this, sometimes I even bust out the double decker taco routine. A real blast from the past.
As for sour cream I bought my first little tub of it for the first time in about 10 years.

Taco Shells - La Tiara are good, but haven't found in Wisconsin. Local ethnic food grocery store makes fresh corn tortillas and chips daily. 50 for $1.50. easy enough to put a small bit of oil in a skillet and make homemade hard shells.
Ground Beef- (if it's fatty, drain fat, if not, leave the small amount in) Salt and Pepper while browning
Seasoning - I make a big batch of this mixture solely for tacos. - and don't skimp on the seasoning.
Chili chowder
Cumin
Coriander
Smoked Paprika
Oregano - Mexican if you can get it
cayenne - if you like some heat and don't have a 3 yr old that can't handle spicy food
Onion chowder and Garlic chowder (if you're too lazy to dice onion and garlic)
If you like the meat with a little sauce add some corn starch to the above seasoning and add in some beef broth when mixing in the seasoning. cook until thick.
Lettuce, Sour Creme, Salsa, onions, cilantro as fixings
Sometimes I go all tex-mex cheddar cheese, but a mexican cheese like Chihuahua is really good.
Rice
cup of rice - cook in a tablespoon or two of veggie oil for a couple minutes. throw in some cumin, garlic chowder, smoked paprika, salt. after another minute add in half cup of your favorite chunky salsa(or pico) and cup and half(or 3/4, depends on how watery your salsa is) of chicken broth/stock. bring to boil, simmer on low for 20 mins. after 20 mins cut the heat and let sit covered for another 20 mins. <trust me.
Fancy
not really fancy, but onions, garlic, jalapenos/chipotles, salsa, spices, lime juice, cilantro, chicken. Pressure cooker for like 10-20 mins.(or slow cooker for 8 hours, your choice). shred it.
The above works really good for baked chimichangas as well. Roll the shredded chicken up with some chihuahua cheese. melt butter with equal part oil. brush a baking pan with the butter/oil mix. brush the tops of the chimis with the mixture.(start with the seam down) bake 5-10 mins at I think 400(don't have my notes), then flip chimis, brush the tops again and bake another 5-10 mins. until golden brown.

i'm concerned about the shredded lettuce, not sure why, just seems weird. how do the shred it and bag it and get it to the stores still green and crisp? chemicals, that's how.

Pork loin chops were on sale, so cubed them up, boiled on low heat with half onion, couple dried chiles, splash of beer. Then shredded a bit, pan fried em. Put in tortilla and top with chile güero salsa and cotija.

To be honest, I didn't shred them very much (chopped really), chops don't shred well. Ideally they would have had shoulder, but you use what you have.

Eh, gourmet. The barbacoa I made in a crock pot off a chuck roast what was on sale at Dillons. I grew the cilantro, tomatoes, and habaneros. The the cabbage was sitting in the fridge leftover from some coleslaw and apparently last much longer than lettuce. And the picked onions, I pickled my own onion and always have a jar in the fridge, not sure why you wouldn't. The queso fresco I did go out and buy special, but that's because that crap goes bad hella fast. Slicing into strips was actually an attempt to make the rest of it last long enough for the leftovers. But I'll suffer being named a gourmand, if that's what we're doing in this blue collar taco thread.

a day late ultra taco pro tip-
warm the la tiara shells up upside down instead of on their sides. instead of the shells closing up when they warm, it opens them up.

warm the la tiara shells up upside down instead of on their sides. instead of the shells closing up when they warm, it opens them up.

CROCK POT POST INCOMING!
you guys like chipotle barbacoa? eff right you do. I make it at home constantly.
get a big piece of beef. I have no idea what kind. usually get the one that's like a giant square.
cut it up into medium sized squares. usually like 6 out of the one big square.
seer that crap in some oil in a dutchy
now throw it in a crock pot. heat level LOW.
if you haven't plugged in your crock pot yet now is the time to do it.
now smash up a can of chipotles and adobo
now smush out about 6 limes worth of lime juice
now dump a bunch of seasonsing in it (ground clove, oregeno, cumin, salt, pepper)
now dump in a cup of stock (beef, chicken, whatever)
now dump in like a half cup of cider vinegar
now blend up all that stuff after the crock pot part in blender and dump it on the meat
now throw in like 5 bay leaves
let it sit in that thing for like 8 hours
don't eat the bay leaves you stupid animals
This is in the crock as we speak. Can't wait to try it.

My fave is beef and spicy sausage (chorizo which I normally don't care for) I get it with cheese on flour tortillas. They have 4 sauces, 2 green, 2 red, one of each is fire. I've eaten a lot of tacos gents, and this place is STRONG!
P.S. they only accept cash money, so no credit card point scams OK....
PPS don't get drunk and fall in the marina, there are salt water crocs in there.

No way. :) Inside the hard shell taco: meat, chz, lettuce, guac, tomatoes, sour cream, hot sauce, and margaritas salsa. Soft shell wrapped around it with refried beans and melted cheddar chz to hold the soft shell to the hard shell. :lick:

how did you make the tortillas? I have become interested in making tortillas recently as you all know

I bought mission super soft tortillas and created a uniform layer of refried beans from a can all over one side. Then I used two parallel chords and drew chords from opposite endpoints of the original chords to find the center of the tortilla. I then placed a hard shell taco shell exactly at the intersection of the 2nd chord pairs, which was the center. I then nuked this combination for 15 seconds and the rest is history.

Here’s the deal, this isn’t a taco from rough ridin' Taco Bell. You slather stuff on both sides to get even distribution. I’m not a fan of just getting some ingredients on the top bite and only some on the bottom. I mean it’s not that rough ridin' hard to get that this isn’t some fast food joint picture.

Unless what I posted was a tostada you aren’t gonna eat that taco without folding it up anyway. So I don’t get why presentation matters so much to Spracs, especially when he said the cilantro was the only thing that looked good. The tortilla didn’t look good? Meat? Cheese? It’s all gonna be folded up and touching everything else anyway.
What does spracs do if he takes a bit and eats a half leaf of cilantro, leaving the other half with a weird bite mark? Just throw it away because it’s not appealing anymore? His logic makes no sense, which isn’t surprising since he likes kav.

Do not recommend using beyond beef instead of ground beef or turkey, they tasted like barf
Which was surprising because I'd used beyond beef for sloppy joes and they turned out fantastic

It’s marinated in the carneceria that I go to. It’s not quite adobada but it does have that hue. Lots of lime.
They slice the skirt steak SUPER thin and it’s 6$/lb. they pull it out of a bucket at the meat counter and it’s delicious.
Pickled onion is a must. The salsa is i believe arbol, habanero, tomato. It’s fire.

They are just store bought corn tortillas. They key is to pass them all individually through a bowl of water and shake them off right as you put them on the griddle.

i made my patented instant pot carnitas but the hack was that i used boneless beef rib fingers instead of pork shoulder. it was p nice.
then i used the rendered beef fat to make the tortillas. also p p nice, but bacon grease tortillas are better i think.

Made "healthy" fish tacos the other night. Used cod and just baked with some rub seasoning and some chili lime seasoning. Made the slaw using yogurt instead of mayo. Standard flour tortilla (we don't really like corn tortillas). Not bad, would have been better if I used panko and either baked more crispy or fried. Also didn't care much for the baked cod. Mahi would have been much better.

never been a fan. I prefer adding more chips and calling it nachos or adding a crunchy shell at the bottom and calling it a tostada. Taco salads can GTFO IMO.

Veggieless taco salad is great.
When I was a kid, we would always put Kraft Catalina dressing on taco salad and I still like it for taco salad. Gives a nice sugary/HFCS contrast to the other salty and savory flavors in taco salad.

Looks great. Now you have to share your pico recipe.
9oz fresh mango, chopped into ~1/2” cubes
1/2 small yellow onion, minced to ~1/4”
1/2 bunch cilantro, finely chopped
1/4C shredded carrots, diced to ~1/4”
Juice 1.5 medium limes
1/8C honey
2 habaneros & 1 Serrano, stems & seeds removed, diced to ~1/8”
1/2tsp fine sea salt
Add all together & stir. Place in frig for 2-3 hours, stir again and serve.

Finally getting around to making the birria tacos that everyone raves about. Broth is tasting really good. I used 2.5lbs of tablitas to ensure a lot of bone-broth goodness along with 5lbs of chuck roast.

Man, birria tacos are lots of work but even more payoff. I used tablitas and chuck roast so as to get plenty of rich bone broth in the mix and boy did it pay off. I have 3 quarts of birria going in the freezer to pull out for quick taco meals later. Damn solid day.

Frida's, Taqueria Los Burritos (corner of Kimball and Tuttle), Antojitos Mexicanos Del Sol (moving into Bob's Diner), Taqueria El Aguila (next to Eagles), Guero Loco (farmers market and patio of Public Hall), and there's a trailer that I've caught before by Napa Auto Parts on Ft. Riley Blvd. The street tacos at El Patron are also really good. #blessed

Took some birria out of freezer for tacos. Did some with cheese directly on griddle and other inside tortilla. I loved each kid equally, but for different reasons. Beans are my charred beef pintos with an emulsion blender all up in their guts. 10/10, would eat meal again

katpappy you need to eat more street tacos. There is nothing between the corn tortillas. They double them up so you have a more stable eating experience.

What is a good place to take the fam to get delicious tacos, but is also not a place that looks like its about to fall down or that serves food out of moving vehicles? Is there a place that is like Mission Taco, but serves better food than Mission Taco?
I'm kind of a taco n00b and don't PI me for saying this, but on a personal level I enjoyed the "street tacos" at La Fiesta in Manhattan as much as I've enjoyed most taco truck tacos.

Authentic mexican tacos are cool and all but does anything hit as hard as regular old homemade white people tacos?
Here is my go to recipe
1 onion diced
1 green pepper diced
1-2 japs diced
Saute over medium heat for like 5 minutes then add 1 clove of minced garlic and cook another minute.
Add 1lb of ground beef and brown.
Drain grease (or not) then add one of those "taco seasoning" packets along with some water and SIMMER for like 10 minutes. (Also if you want to get crazy and add some smokey heat throw in a chipolte salsa can with the water)

Funny story a professor at kstate had never been to Runza and was in Lincoln with 25 African visiting scholars from throughout the continent and he took them to Runza and it was universally considered the worst meal they had in America. Thank you for reminding me of this funny story.
