When I was living in New Mexico Mexican Restaurants served tacos and burritos that had peas and potatoes in them. Also, all sauces were made from chiles and not tomatoes, and most of the dishes that had meat it was typically brisket, and hamburger was restricted to Taco Bell.

I’m headed to Santa Fe for spring break, and will try and have tacos every day!

Griddle cooking tonight. Marinaded the chicken first and made fresh guac in the molcajete. Orange sauce is a really good habanero that I found at HEB.

Blackened fish tacos (largemouth bass) with a mango habanero pico. Pacifico rice and grilled calabaza squash fill out the plate nicely.
