Claire Robinson recommends putting a thyme leaf or two in each ice cube square and filling the entire tray with ginger beer.  Freeze and use as ice in your D&S.  Sounds interesting.

tried my 1st ever tonight.  it was a lot sweeter than i would have thought.  maybe i did it wrong, dunno.

the type of ginger beer you use is key.  some are garbage and just sweet with no spice.  but ya, they are kinda sweet.

ya reed's is a joke.  sadly, it's available everywhere.  D&S's can get way too sweet really easily that's why it's important to bring the stormy to the dark and not just use any ginger beer.

ya I like to butter up some rum. 

2 sugar cubes
2 oz dark rum (I like cruzan black strap or kraken for this)
boiling water to top up

put sugar cubes in the bottom of the glass or cup, add rum and top with water.  dot the surface with butter and stir gently.
