Did breakfast for dinner tonight. No pics - you know what bacon, eggs and toast look like. Game changer was the leftover potatoes from last night's pot roast. Fried those bad boys up in some bacon grease.

I saw this and granted my phone brightness was very low, but I thought those were plantains.

Bacon is baked at 350 on a foil lined cookie sheet for 10-15 mins. Prop one end up to let the grease drain to one end. What doesn't get consumed on Sunday is used during the week. Reheat 30 seconds on high wrapped in paper towel.

Cold oven to 425, then lower to 375 for 8 minutes. The tilt is why that bacon is cooked so uneven, Tom. My first time to be disappointed in you.
