Hollandaise is a great sauce.  Slightly better than Arby's sauce but not quite as good as sweet and sour sauce.

Also, not a sauce, but does anyone else here love dousing fries (or "chips," depending on locale) in malt vinegar?

Definitely both.  I like to kinda butter the top of the PR with HR before cutting, then dip in AJ.  Prob not very traditional.  Akin to mixing wasabi into soysauce and dipping sushi into it, I guess.

I cut up my PR pieces ahead of time.  I eat slowly leaving 2 pieces in the AJ soaking it up.

I took a sushi class last year.  The chef told us that this(mixed with mayo) is what is on the above-mentioned Bang Bang Shrimp.
