Made some mom's tacos yesterday. 1 lb ground beef browned with a 1/4 onion and a couple of garlic cloves. Topped with sharp cheddar, tomato, onion, and Pace restaurant style. Old El Paso crunchy Taco shells.  Very good, this thread inspired me. Hadn't made mom's tacos since college

True story, I took over the taco making from mom when I was like 8. I was just like outta my way and that was the one meal I made the family growing up.

Cat27 here posting live from Pepe's tacos, marina vallarta, P.V. Mexico.  Tacos al pastor is their specialty, BBQ pork with pineapple.  My fave is beef and spicy sausage (chorizo which I normally don't care for) I get it with cheese on flour tortillas.  They have 4 sauces, 2 green, 2 red, one of each is fire.  I've eaten a lot of tacos gents, and this place is STRONG!

P.S. they only accept cash money, so no credit card point scams OK....

PPS  don't get drunk and fall in the marina, there are salt water crocs in there.

My new thing: ditch the tortillas/shells, make some rice, put it and all of the taco stuff in a bowl. For whatever reason, I do this more often with with leftover meat. I use boil in bag rice because it is easy.
