Because William obviously believes that Dolores is sentient. So Maeve wouldn't have been the first time he realized it.

Not sure he believes she's sentient. He has come to the realization he fell for it. Now William is cynical and holds a grudge. Up until he kills Maeve and her daughter, anyways.

hey we don't know how William and Delores's first interaction from 30 years ago ends.  when she gets wiped I bet she completely forgets him and he becomes disillusioned with westworld robots.  then we he says maeve mourning he thinks, "huh, maybe I was wrong.  I should try to save Delores."
