Quick- Grilled chese or panini on the george foreman.

Long- Hamburger/steak on the grill along with grilled veggies, normally an ear of corn(husk on,soaked in water, throw on grill for 20 min), green peppers, mushrooms etc.

so far this summer I've been doing a lot of chicken breast (smart chicken) marinated in either citrus or pineapple juice and jerk seasoning with grilled with corn on the cob. I pound the chicken breasts with a pan so they aren't super fat in the middle before I marinate them. I usually just throw the shucked corn directly onto the grill. sometimes asparagus on there as well.

I grab some fish fillets out of the freezer and brush them will olive oil and put some seasonings on them. put on a baking pan with frozen veggies tossed in olive oil coated in spices. bake in oven from frozen at 475 ish for 30-45 mins ish depending on the thickness of your fish/veggies. 

chipotle mayo. mix like 1/4 cup mayo with a splash of lime juice and like a table spoon of chipotle chili chowder and a teaspoon of minced garlic. dabs of sriracha. stir up. use as condiment for everything in the world

I make a pretty awesome chicken and potatoes thing at least once a week.

Cut chicken breast into 1"X1" cubes. Place in skillet. Turn heat to medium high heat. Immediately season with garlic chowder and pepper. Then pour 3/4 of a bottle of Kraft Light House Italian Anything Dressing.  Stir every few minutes. Cook until dressing has thickened and turned to almost a glaze on the chicken. I like to cook mine until the glaze is about to turn black.

Remove from skillet and place on buttered baked potato. Add grated cheese and sour cream.

Delicious.

I've been frying eggs over medium and stacking them between 2-3 slices of tomato.  a real nice stacker for any time of day. 

add sea salt and fresh ground black pepper from my elite purple Peugeot pepper mill.  (fresh) basil if available.  drizzle w/ tapatio and enjoy.

Dice up some red potatoes, onion, mushroom. Season w/ some minced garlic and season salt. Wrap it all in foil with butter, throw it on the grill w/ a chicken breast

One pound of thick cut bacon (that's right one pound) Oven Baked for extra crispiness
Iceberg Lettuce
Sharp Cheddar Cheese
Fresh Tomato
Mayo
Salt and Pepper
Chopped red onion
Oroweat 7 grain bread

1000 calories of awesome!  I always feel guilty afterwards though.

I've got a bag of frozen tilapia filets in my freezer. Sometimes if I'm feelign super uber lazy I will just dethaw one, cover it in lemon pepper seasoning, wrap it in a paper towel(Keeps moisture in) then throw it in the microwave for 1 minute.

Suprisingly good.

Grilled chicken and green pepper/onion/mushrooms on the grill.  Sear the chicken then put them on the top rack DIRECTLY OVER THE VEGGIES to add a little more flavor.

Or PB&J with a tall glass of milk.

yeah, orange, grapefruit, pineapple, lemon, lime, whatever you have. it's basically just an acidic liquid for the spices. it's great. orange is probably my favorite actually.

slice whole head of cabbage into 3/4" to 1" slices. brush with olive oil and salt and pepper. put on baking sheet and bake at 400 ish until cabbage is pretty much cooked. Also cook a bunch of bacon. Pull cabbage out of oven and heat broiler. Top cabbage slices with crumbled bacon and your favorite cheese (bleu is best, obv). Place in oven under broiler until cheese is melted to your liking. Remove from oven and consume.

great by itself or as a side to your favorite cooked meat (steak, obv)

Pasta or burritos.  I can make some pretty bomb burritos without much effort.

-Start rice cooker (two cups of rice is more than enough for girlfriend and I)
-If really lazy steam chicken in basket above rice
-If not really lazy, sautee onions and peppers and either brown ground beef or cook chicken on frying pan
-Heat up can of refried beans and can of pinto beans on stovetop
-Rice finishes in 40 minutes
-Season rice
-Chop up chicken if making chicken burritos
-Add onions, peppers and beef/chicken into rice pot
-Depending on if we want them or not, add things like canned tomatoes and canned corn into rice pot
-Mix pot, get out the salsa and sour cream and shredded cheese
-Assemble burritos

I've been experimenting with different tuna salad and tuna fish recipes.  Did one the other day with the mayo/relish/tuna but mixed in some spicy mustard.  Thinking about doing one with horse radish and coleslaw.

Stuffed Chicken Breasts

Place fresh chicken breast in plastic bag and use meat hammer (flat side, rooks) to flatten out to about 1/4 inch (make sure you use large bags as they spread out quite a bit).

Season both sides of flattened chicken (I usually go a fiesta lime, cayenne, garlic/onion mix).

Saute diced onions and diced green/red peppers in skillet then mix in bowl with diced tomatoes and jalapenos.

Put scoop of cream cheese in bowl and microwave for 10-15 sec. to soften, spread out on flattened chicky breast, then put some mixture in center of flattened chicken breast.  Top with a slight bit a cheese.

Wrap one side of breast over to other and crimp edges or use toothpick to hold in place.  Season outside as well.  \

Bake in greased dish in oven at 350 for about 45 min. to an hour.

**For additional heat and greatness - put a little habanero queso in center **

Flour tortilla with thin layer of fav BBQ sauce
pulled pork or shred brisket
sprinkle mozz. cheese on top. in the oven for 8 minutes til cheese starts to turn and tortilla is crisp.

Also excellent with leftover pulled chicken or turkey with alfredo sauce. :lick:

Super easy go-to I do about once a month is chicken roulade w/ panchetta, asparagus and some decent cheddar. Other than that I don't really cook the same thing over and over again.

Do you only stick to the one flave, Dlew? I used to only get the beef, bean and green chili, but I've been switching it up as of late. Really digging the chimichangas as of late. Judging by your 2:30 microwave time, you go two at a time. Do you flip them over after a minute and a half and let them cook the last minute on the other side? I do. But that's only when I have 2, which is rare. Usually I go with 4, 2 minutes on one side and 2 minutes on the other.

Here's the deal re. flavors.  If spicy taco picante is available, I'm buying that.  The trouble is, that it must not be a very popular flavor - lots of places sell every flavor besides STP.  Drives me nuts.  If that's the case, then yeah, I go with the spicy bean & 'peno 'changas.  A few times last semester I dipped into the chicken and rice ones, but they were pretty bland.  The upside to that was that I was in a huge salsa-kick at the time, where i'd just try out a bunch of different salsas, which was fun.  And those burritos needed salsa.

Re. "the flip" - no.  I never flip.  Although sometimes I intentionally turn the burritos upside down to start with.  I should start flipping though.

I've never had four at a time.  Two is plenty for me.

I get the purple bag (bean and beef?) on occasion. I only buy that flavor because my wussy Crohn's disease having intestines handle those alright. Two at a time is plenty for me.
