A team whose mascot is its color and who represents itself with a pine tree seems pretty unique to me.

Doesn't get much more unique than that. 

At NYU the teams are called the Violets (as in the color), but since that doesn't intimidate they have a bobcat as a mascot.  This comes close to the Stanford situation, but a tree is more unique than a bobcat.

The Indiana State Sycamores used to be known as the Fighting Trees and had a tree for a mascot, until they decided it needed to leave. (pun intended)
