Fried matzah

1. Buy a box of matzah.  Looks like this in the jew section of your local grocer:


2. Take 3 pieces per person and soak them in lukewarm water for about 5 minutes (until they are slightly soggy).

3. Drain the matzah, crush it w/ hands. 

4. Beat a few eggs and mix it with the crushed, soggy matzah

5. Fry in butter until golden brown

6. Enjoy w/ salt.  I usually eat first bowl with salt, and then second bowl w/ cinnamon and sugar, or jelly.
Where did you get that overnight bag?

Hyvee had a cart full of half off passover food yesterday...

So did Price Chopper last Friday.

They had GIGANTIC signs all over the stuff saying "NO RETURNS!"  So, you better be pretty sure if you want to buy it.

1 yellow Onion Diced
Chicken Tenderloins cut into bite size pieces probably like 10 strips. :dunno:
One Package of Linguine
Stick of Butter
1 cup Heavy Cream
Olive oil
Cajun seasoning/Rub.  I think I just used a bottle of webber cajon seasoning.
Green Onion.
1 Habanero(?)
minced garlic (one or two cloves)
Fresh or Canned Dice tomatoes

Heat a table spoon of oil and a tablespoon of butter really hot.  coat chicken pieces with  seasoning and cook in pan until brown/done like you would blacken it.  then set aside.

if you need to add a little more oil/butter then add the diced onion and minced Habanero.  Cook until Onions are soft, throw in the Garlic and cook until you can really smell the garlic.

When onion and Garlic and Hab are done pour in a cup and a half of Heavy cream.

Put in a tablespoon more of the Seasoning (less if you don't want it too hot).

cook to reduce the sauce ( :dunno: 5 minutes.

Put in can or about 2 cups of diced tomatoes.  Drain the can if you use canned.

Mix in a half a cup of Parmesan to the sauce and return the chicken.  

Cook linguini to al dente while the sauce is cooking and add noodles and toss around.

Top with Green Onion

It's the best thing I've ever made, and I'm not a bad cook.  you can tweek it to your liking.

you really end up using a half a stick of butter at the most.

You could probably use half and half but you'd have to probably reduce it longer.

I love Indian food but have never made any.  Seems hard.  Like, a lot of ingredients I prob. don't have plus naan seems like a huge pain in the ass if you don't have one of those crazy indian oven things.  May try mint chutney and go from there.  I think that is pretty easy.

Yeah, just get some of the curry paste stuff you see in your typical Indian section that doesn't suck (can not vouch for these existing in your area) and mix in with some veggies/chicken/what have you (wife uses potatoes, cauliflower, onions, carrots, peas and chicken) and you're most of the way there.  Garlic butter up some store-bought naan (not ideal, but passable) and boil up some rice and you've got an easy + delicious meal.

When you add the cream you need to add some pasta water too to thin it out slightly.

Making this:

Moroccan Chicken Smothered in Olives

8 skinless chicken thighs with bone
2 onions, peeled, halved and sliced
1 teaspoon ground ginger
2 teaspoons ground turmeric
2 teaspoons ground cumin
1 tablespoons Spanish sweet paprika
4 cloves garlic, peeled and chopped
3/4 cup cilantro leaves, chopped
2 cups low-sodium chicken broth
11 ounces pitted green olives in brine
Juice of 1 lemon

1. In the bottom of a large, flameproof casserole, arrange onions and top with chicken pieces. Sprinkle with ginger, turmeric, cumin, paprika, garlic, and cilantro (if using). Pour chicken broth over all.

2. Place over high heat to bring to a boil, then reduce heat to medium-low. Cover and simmer for 30 minutes, turning once. Meanwhile, in a small saucepan, combine olives with several cups of water and bring to a boil. Boil 2 minutes, drain well and set aside.

3. Add olives and lemon juice to chicken, and simmer uncovered for 10 minutes. If desired, simmer for additional time to reduce and thicken sauce. Serve hot.

Will prob. throw in some spicy red currie to heat it up a bit :dunno:
