I just put a whole onion plus in a small batch of salsa.  I think it is more onion salsa than it is tomato salsa.

spread out on cookie sheet, drizzle lightly w/ olive oil, little bit of sea salt and cracked pepper.  Bake in oven at 424deg for 10 min or so.

My fav way to have it.
