I have not peeled a potato in 20 years.  Boiled, fried, mashed, baked, sliced into French fries, doesn't matter.  Skins are on.  I do wash them though.

i pretty much just wash stuff that's being consumed uncooked (and mushrooms)

At family gatherings, we used to always eat the skins of the baked potatoes that my grandpa baked on the grill. :lick:

Then one time we heard him say, "No I don't wash the potatoes, you throw the skin away anyway."
Oh man do I have a surprise for Mrs. Gooch.

That sounds good.  I always leave the skins on for everything but soups.  I will give that a try.

Cover with light coating of oil. 
Sprinkle with sea salt. 
Bake.
