Scrambled eggs with Kansas groundbeef covered with homemade white milk gravy.  A side of hash brown and Texas toast with blackberry jam.  Hillbilly heaven!   The worst breakfast was once at a hotel breakfast bar I mistook waffle batter for gravy for my biscuits.   About had a hot barf breakfast.

I put four eggs and a tad bit of milk in a bowl and mix it up in a bowl with a fork. I put a touch of olive oil and a touch of butter (not margarine you fat hayseed) in the skillet and warm it up. Then I cut up an onion, green pepper, and tomato. The eggs go in and get pushed around until halfway fluffy, then I throw everything else in and it starts to smell awesome. Add some pepper jack cheese towards the end, and throw it all in a tortilla. Feeds two. Sometimes I add sausage or bacon or pepperoni or turkey or avocado. Finally you dump your favorite medium salsa or sauce of choice in there and voila, breakfast 'to without all the sogg

Sounds pretty good mocat.  I always add milk when cooking scrambled eggs, it makes them more fluffy.

only thing missing is sour cream, and idk how you didnt include this  :nono:
