Pete, as a former Northlander who loved "Corner Cafe" biscuits and gravy, I'm tempted to try the Big Biscuit here in the Southland.  Thoughts?

I'm just afraid to try someplace new because Corner Cafe had the best ever, and I'm afraid to love again.

Pete, as a former Northlander who loved "Corner Cafe" biscuits and gravy, I'm tempted to try the Big Biscuit here in the Southland.  Thoughts?

I'm just afraid to try someplace new because Corner Cafe had the best ever, and I'm afraid to love again.

They are very good at Big Biscuit.  Honestly though, there are loads of places that have very good b&g around here.  Heck, Ingredient is good.

On Christmas Eve I told Mrsdobber that I was going to make some biscuits and gravy (I didn't say "sausage gravy" on purpose since it is pretty much implied that you are not going to make gravy without adding in sausage) over the holiday break. Haven't done it yet. May do it Monday morning.

North Topeka bowling alley.  I was Optimist Club student of the month one time, and was invited to breakfast there before school.  The B&G were amazing.  I also used to get it during Bowling Class, first period.

the chef in mhk calls it the grant. their menu (old menu?) called it pretty much the perfect breakfast. at least i think it did/does. either way, i agree.

the only thing and this is splitting hairs, is that i wish it was peppered bacon. the bacon is perfect but if if they had the option for peppered bacon then the bacon would be 10 instead of 9.5 and the whole meal would be 10 instead of 9.9.

I agree, not a flavorful improvement at all, but it's definitely a different choice on how you would/could order it, if a place had multiple options. 

What about flaky buttermilk biscuits vs those biscuit-esq drop biscuits?

That's clearly a challenge with dishes that are served beneath gravy. Though, I thought "Chicken Fried Chicken" was the best thing on the Texas Star menu once upon a time.

alternate version of eggs benedict were a spin off, of the regular eggs benedict

Maybe b&g is just an evolution of plain old biscuits for breakfast. If it is, it is the evolutionary end of that species of breakfast food. It won't get any better than that.

A lot of talk about the biscuits, but making real gravy and not some crap from a package is a big deal. IMO. That goes for all gravy though, I can't stand packaged gravy.

The first time I dipped my hash browns in my leftover sausage gravy, my life never went back to the way it was before.

To this day, my ultimate comfort food is hash browns in sausage gravy.  A close second is cold chicken fingers from Dillons dipped in instant mashed potatoes.

hamburgers are ok but i kind of don't like them because you can't do anything neat to mix them up. chicken sandwiches are different though. last week i ordered a chicken sandwich but subbed prime rib and oh my god so god.

my favorite drink is a vodka and tonic because sometimes i get it with gin instead and then other times i get it with oj or soda. i don't really like bloody marys because it's not as versatile.

Also lol at omelettes being for obese people only. Yeah just make 4 biscuits and completely drown them in creamy white sausage fat until each biscuit weighs twelve pounds. It's the meal that vanna white swears on for the last 50 years

I went to Fort Hays for a couple of years.  There were 3 or 4 moms of guys that graduated from Hays High that decided with no kids left at home they needed to do something together to stay friends.  The rented out a little space in a building that was between the bars and the college houses.  They only had a walk up window and were open from 9pm to 2:30ish Wed, Fri, and Sat nights.  Every night they made a few different homemade things, but biscuits and gravy were almost always an option.  They were the best biscuits and gravy I've ever had.  Nothing beat walking 2 blocks drunk at 1:30 in the morning for homemade biscuits and gravy for $3.00.

Pete, as a former Northlander who loved "Corner Cafe" biscuits and gravy, I'm tempted to try the Big Biscuit here in the Southland.  Thoughts?

I'm just afraid to try someplace new because Corner Cafe had the best ever, and I'm afraid to love again.

They are very good at Big Biscuit.  Honestly though, there are loads of places that have very good b&g around here.  Heck, Ingredient is good.

Scrambled eggs with Kansas groundbeef covered with homemade white milk gravy.  A side of hash brown and Texas toast with blackberry jam.  Hillbilly heaven!   The worst breakfast was once at a hotel breakfast bar I mistook waffle batter for gravy for my biscuits.   About had a hot barf breakfast.

I put four eggs and a tad bit of milk in a bowl and mix it up in a bowl with a fork. I put a touch of olive oil and a touch of butter (not margarine you fat hayseed) in the skillet and warm it up. Then I cut up an onion, green pepper, and tomato. The eggs go in and get pushed around until halfway fluffy, then I throw everything else in and it starts to smell awesome. Add some pepper jack cheese towards the end, and throw it all in a tortilla. Feeds two. Sometimes I add sausage or bacon or pepperoni or turkey or avocado. Finally you dump your favorite medium salsa or sauce of choice in there and voila, breakfast 'to without all the sogg

Yeah.  Ketchup on eggs is a thing ( a gross thing but still a thing) but ketchup on cottage cheese has never happened on purpose.  I refuse to believe it.

It's simple @mocat. I tear off the bagel and dip it in the yolk, ketchup, hott sauce mix i've created and eat it. Sometimes I cut up part of the egg and place it on top of a piece of my bagel. Man, i'm getting hungry.

I like B&G.

But sometimes just plain ole buttermilk biscuits are great.  If has to be well made and fresh though.  Put some apple butter on there, yum!

I can forgive the Grand's, they are pretty tasty, and homemade biscuits take a bit of work and experience.

It's just that sausage gravy is super easy to make from scratch and is far superior to any gravy mix.

Making gravy is rewarding and it a must have skill to cultivate among true B&G aficionados, however, i can say that the ease with which one can whip up some choice sausage gravy with the product below precludes me from passing judgement on any powdered gravy users.

mix chowder with cold water to make slurry, mix 1 part slurry to 5 parts boiling water, stir, add crumbled sausage.

Its so GD easy, you can do most of it in the microwave or with an electric kettle, it cheap and it actually makes really good gravy.

That mix is essentially flour, dried milk, corn starch, and spices. So just because you put all that super complicated stuff in one by one makes you Emeril Lagasse or something? I don't buy it. Again- great B&G PMS. Would eat again.

I mean, I said specifically it was really easy, so I don't think anyone was claiming Chef status. I would love to chow down on 'head's B&G.  I just believe in a difference between fresh and pre-packaged ingredients when it comes to pretty much any food.

I had the worst B&G ever yesterday. They put a layer of egg between the gravy and biscuit. What the eff? Plus the biscuit was awful and the gravy used some sort of weird packaged sausage chunks instead of crumbled sausage. Gross.

Elite sausage gravy involves frying the sausage (spicy of course), adding the flour (make sure you cook down at least a minute to get rid of any floury taste), then starting the gravy with some chicken broth. Let simmer, then add heavy cream or half and half (no measly milk). Then season for taste (namely some salt, pepper, cayenne and perhaps a little thyme) and simmer before pouring over biscuits of your choice.

Every time i get it, though, i always have to walk by the B&Gs at the end of the line, taunting me.

A few weeks ago SdK and I made biscuits and gravy and eggs at my house.  We put the over-medium eggs on the biscuits and then covered that with gravy.  Amazing!

Get two skillets going, store heated tortillas on a paper plate with another paper plate upside down on top enclosing them, and cover w kitchen towel until all are heated.  It keeps them warn and pliable and heating enough for 4 ppl doesn't take very long.  If using for bfast, I use the 6" tortillas and have two in each skillet.

you can put them on low heat in a stack or microwave them for 30 seconds in a stack

it's the easiest recipe in the world
-brown a 1/3rd bag of potatoes o'brien, set aside
-cut a pound of bacon in half, then slice it against the grain into quarter inch pieces and then brown them and set them aside
-brown half a pound of jimmy dean hot sausage
-put everything back into the frying pan and then break 5-6 eggs into the mixture stirring it the whole time, cook the eggs for a minute or two until their done
-warm tortillas, garnish with cheese, salsa, etc

Making it at home means you can make it exactly how you want it.  I mean, you can take the little things you like about three or four different restaurants' breakfast and merge them into one super breakfast perfectly for yourself.  When it's dishes time, you can tell someone else to do them since you made breakfast.  You don't have to wait in a crowded waiting room with a bunch of ppl that haven't showered and think it's fine to wear rough ridin' pajamas in public, and you pay like 1/3rd of the cost of the restaurant. 

It is about as win/win as it gets. 

Even time wise, you spend a lot less time just making it than you would to get to the restaurant, wait to be seated, ordering, and waiting on food.

The Brookeville Hotel biscuits are suitable to be eaten alone.  They are very dense.  I still prefer them with room temperature butter or honey or jam, but I have eaten them dry and enjoyed them.

Decided today that I am going to make a version of sausage gravy(without flour) and eat it over scrambled eggs(no biscuit).  The gravy is the flavor I am after when I eat B&G and I like it when a little gets on my eggs, so why not cut out the middle man that is the shitty biscuit that has to have gravy on it to be edible?   :dunno:

I am going to be cooking with heavy cream and butter.  It will thicken up just fine.  Also, in case of emergency, I can use a little flour.  Just trying to limit it as much as I can.

I do this with pan sauces all the time.  It won't get as thick as you could get it if you are cooking gravy out of a pouch, but it will get thick enough to give me what I want as far as creaminess and will satisfy the flavor profile I want, maybe even better than traditional methods.

That is my focus in eating low carb.  Figure out what flavor or texture I am actually looking for from something I crave, then recreate that as best I can without the carb component.

Circle vs Square probably depends on if you like the sides of your biscuit soft or not.  If you want them cooking each individually (air on all sides) to get a crisp side, you need round.  If you like them only crispy on the top and bottom but soft on the sides, square's what you want

Had Cracked Barrel yesterday. Biscuits were adequate. Gravy not so much.

I had B&G at the Shack a couple of weekends ago and it was horrible.  They even screwed up the hash browns.   :cry: (ftp://:cry:)

Pretty rich food appearance criticism from you. Also, square biscuits are superior. Round biscuits lead to extra dough which must be reworked and cut into round 2 biscuits which are tougher and worse.

I see. These are pretty small, ~2” x 2” so no burning problems. Could be if they were bigger though.

I used mine to make a salt crust for prime rib.  Threw the sea salt, rosemary, etc. in that S.O.B. and let 'er rip.  I had to sacrifice a load of coffee beans to clean it out, but it was worth it.

Does anyone use syrup on their B and G? Mrs SSOC's dad likes to put butter and syrup on his biscuits before applying the gravy. It tastes pretty good but ventures a bit far into the realm of "Using Your Body as a Trashcan" for me.

Haven't had B&G in years, but this thread reminded me of this tiny cafe where I grew up in whitetrashville. In HS we would skip first hour and go there for breakfast every one in a while. At the time it was the best B&G and best food on the planet. It was probably not great at all and I was just a stupid kid, but who knows.  :dunno:

Well, puniraptor, these were just some quick drop biscuits made with sourdough discard, and my sourdough starter is a whole wheat flour base. The drop biscuits didn’t have much lamination, and so they weren’t all that well suited to splitting open.

We always use Bisquick. Just a notch below the ones mom used to make but I like them a lot more than canned biscuits.

I think it is a bit like potato salad in this regard. It is better to skip the bad / gross versions of B and G. Unlike pepperoni pizza or hot dogs where there isn't much separation between the good and bad versions.

Yeah. Used the recipe on the Bisquick box. Much less cleanup than rolling them out and making neat little round ones.

Ah I don't have experience with dairy free gravy or biscuits but I'm sure there's ways . But yeah Trader Joes has great GF flour that works for both biscuits and gravy

If the problem is lactose, you can use lactose-free milk and just about everything you cook will come out tasting about the same. If it's a milk allergy, stuff made with soy/coconut/whatever will be noticeably worse.

My father in law does this thing where he coats his biscuits with breakfast syrup prior to applying the gravy and I’ve always scoffed at the practice as being too trashcanny but I did this tonight and it is an incredibly tasty way to experience your b and g.
