Tonya Harding's El Dorado Egg Scrambo:
1 jalapeno pepper
1 green bell pepper
1 red bell pepper
1 onion
1 ripe tomato
6-8 red potatoes
5 eggs
1 cup shredded cheddar cheese
dice all pepers, onion and tomato. dice potato, toss in olive oil and season with salt, pepper and oregano over pan. add half of peppers, onion and tomato and bake for 10 minutes at 400 degrees.
scramble 5 eggs. add remaining peppers, onion and tomato to pan with cheddar cheese.
turn oven to broil for 3 additional minutes. take potato mix and dump over plate then dump the egg mix on top.
