This whole debate started over farmhouse denying my lovely wives request of scrambled eggs on her breakfast sandwich vs over easy. We've made peace with this. We even ate at farmhouse one last time to show our support for their amazing hungover food magic throughout the years.

at Novel, on the prix fixe menu, i asked the waiter if i could do the flourless chocolate cake for dessert rather than the lime cake thing. i felt horrible asking but i had the flourless chocolate cake before and really really wanted it. it was probably the first time in my life the want outweighed the shame of asking them to change something.

Maybe I was wrong in my example because sausage gravy is on the menu. The menu contains all acceptable raw materials with which to craft new dishes.

Some of these fancy places change their menu all the time, for the time of year, ingredients, whatever it may be. I was sad farmhouse didn't have their amazing breakfast sandwich last time I went in, but I didn't ask them what was going on. Sometimes I'll ask why the change, just because i'm curious how some restaurants work, after being in the biz for so long.
