Yeah I need to do more veggies, I have always liked them both steamed and raw, just never think of it.  Fruits too, I know I eat too many sandwiches (carb overload).  I drink like a gallon of water a day so idk if I could do more of that.

Get a vitamix. Throw in a couple handfuls of spinach and or kale with an apple, a few strawberries and some water. You are good. Can also add some flax and coconut oil. Delicious and knocks out a couple servings of fruits and veg with ease.

Roasted cauliflower with Frank's hot sauce. Mmmm. I cook it on the grill wrapped in foil with butter. Toss in Frank's after cooking for fifteen minutes.

Parsnips, carrots(2:1 ratio), some quality olive oil and seasalt.  Roast for like 40 min at 350.  Sprinkle diced parsley on top as you serve.  It's amazeballs.  I have been roasting a crazy amt of veg lately and have been trying to branch out into things I didn't use to eat(parsnips, turnups, Brussel sprouts, etc).   Roasting really creates a bunch of flavors you don't get out of them otherwise.  Also, add other crap to them.  Dried cherries, some shallots, etc.  I sometimes get a decent wine and chicken stock/beef stock and reduce a cup of wine and 2 cups of stock to practically nothing, then drizzle over it. 

You can do some minor things like that that can really make some amazingly delish stuff.

Turn on oven to bake at 350 or so and wait unitl it reaches that temp.
Cookie sheet
foil over top of the cookie sheet
cut up the veg and toss it with oil/salt
spread on top of the foil on  the cookie sheet
put in the oven with the rack at the center position in the oven
close oven door and set timer for like 30 min
Check at timer to make sure nothing is black or on fire, maybe stab with a fork.  You want very soft veg
cook longer if needed, or take out and stuff in face.
Turn oven off.

i put aluminum foil in the microwave one time when i was a little tyke and it did not end well. do not recommend.

nope.  BTK and I have a nice little b-sprout recipe that goes: step 1 - cover in oil.  step 2 - burn the crap out of.

I waited for the rec to kind of clear out from all the New Years people and got a great lift in yesterday.  It's been way too long but I'm gonna get back in the habit of going again.  The only thing that sucks about starting up again is the first sore, yeah it tells me how out of shape I am and that it will get better.  The thing is I have that soreness opposite side of my elbow and when I straighten out my arms it hurts.  I know it will go away in time but good grief I feel weird walking around with my arms bent
