Too many people in Summit/Eagle county but it's great if you don't mind people.  Colorado is a big state with lots to do so depends on your personal tastes.  If you do go don't do the RMNP/Trail Ridge Road/take pics of elk thing that everybody does.  Do something different.  PM mocat for advice on different crap to do.

You can do just about anything you want in Colorado.  Denver has some incredible restaurants.  There are ski areas for about any price range/skill level.  If you let me know some interests and the time of year you plan on going, I can try to point you in the right direction.

you can do some light hiking around Ested Park/RMNP, I think your wife would probably love Estes Park has a lot of shops/restaurants, couple breweries, Mansion from The Shining/Dumb and Dumber.  Lots of stuff to do, good drives if you don't want to hike too much.

Garden of the Gods, AFA, some breweries.   But I wouldn't say more than Denver.   Denver is kind of a nice basepoint for hopping up to Ft. Collins, down to CS, into the front range.

You could drive to Loveland and stop by where k_m used to own up on dorks in tetherball at Mary Blair Elementary.

Top 15 listings from tripadvisor below. I'd say that 8-10 of Denver's seem like experiences very comparable to those you could have in many large cities. I'd say that for only 1-3 of Colorado Springs'.
