i'm wanting to take a trip in late March from KC.  Good places to go that time of year?  Looking at a long weekend, want nice weather, good food/booze options, etc.  Initial thought was maybe spring training, but not sure i would enjoy shitty baseball and was just there a few months ago.  Anyone have some good recommendos?

Vegas actually has some pretty decent hiking options nearby with Red Rock Canyon and Valley of Fire.

Charleston and Savannah have been on my long weekend list for awhile.  Of course New Orleans is always a good time but I don't know about hiking there.

do you want to visit just cities? Is food important? History? Nature/beaches? Architecture/museums/culture? A more unique experience?

like, going through that list (without visiting either, just helping you think it through):

food: Iberia seems like it would be better overall but Eastern Europe might be more interesting and unique. Like you can get paella everywhere in the US but not as many places to get something like beet soup
Nature/beaches: Slovenia has incredible hiking for instance but Iberia would have some great beaches. Also mountains in austria and stuff
Architecture/culture: IMO they're all pretty similar with a lot of old crap but Iberia would probably be more crowded and touristy
Unique experience: based on the millenials I hang out with who think they are interesting because they travel, everyone and their dog goes to iberia. Way fewer Americans go to places like Budapest but I've heard nothing but lovely things about Budapest from those who've gone there and I don't know of anyone who's been to Bratslavia.

Watch the Anthony Bourdaion 'Parts Unknown' Budapest episode, then go there and then go eat everywhere he went.

If you want to hike while you're in Vegas, would strongly recommend hiking up Mt. Charleston.  It's an all day hike, but beatiful and uncrowded.
