i am ready for you guys to give me more reviews of piggins

Not bad, not great right now.  Had a bit of a talk with the owner.  They were looking more for catering space and this opportunity presented itself.  Beef brisket was a bit tough for my preference.  Sides were pretty good.  Big problem he mentioned was having to pull their various fowl off the menu because people associated it with the bird flu stuff going around, although he assured his meat was good (local supply out of NE I think).  Still working out some kinks in supply and demand because when I went it they were still getting picked over really well and out of interesting stuff.  Price were reasonable, wait staff was pretty good, interesting bar area.  Its worth the stop by if you're looking for something different/local/nonchain.

said he was tossing LBs daily because people weren't buying.  finally pulled it off the menu, but that was a few weeks ago.

sounds like a planning issue. i have never gone to a "bbq" place and ordered chicken. people want the pork, ribs, and brisket. i wonder how many lbs of chicken oklahoma joes (or cox) threw out due to the bird flu?

Well I think you should work in the restaurant business before making all these assumptions because it does effect your business.  What the public thinks is not logical when it comes to food supply.

And I regularly get chicken or turkey at bbq places because its a healthier option (to a greatly diminished degree once you sauce it) than red meats or pork.

But on point, it's a place to try for yourself.

Obviously you should fwd this to tap house too and every other business just starting out with a public front or even an exceptionally busy week.

so he used to accurately gauge demand and sold significantly more fowl (per capita!) than he does now?

I've been in a similar position and I don't think you should criticize people without some background.  Manhattan is tough restaurant environment to nail down at times.  It's even harder when you do an opening to gauge demand.  I'm not trying to fight with you, just suggesting to cut the guy some slack.  The public is fickle and poorly informed at times which makes business a lot harder.  I mean if we assume the public is well informed, why does Seattle have a lower vaccination rate for Polio than Rwanda?

wouldn't a poorly informed public be what he wants here?  for example, i had no idea there is currently a bird flu problem going around (did this news get buried in the chiefs thread or something?)

one point is that there has been a bird flu outbreak for the entire time he has been open. i dont hold inaccurately predicting demand against him, but i want him to be successful and i think he will be more successful if he has a realistic understanding of his problem instead of searching for excuses and blaming his fickle, poorly informed customer base.

also, a poorly informed person might eat chicken instead of an obviously superior meat from a pig or cow.
