I haven't been on this blog much lately so I was not able to share this tidbit until now, which is that Brockette will be working at Tallgrass Taphouse this summer. I already informed her that she may be expected to provide some insidery scoops if asked. Regarding the menu size, about a week ago I was asking her what the menu was like and what was on it and she rattled off a whole bunch of items and I was like "Wow, that sounds like a big menu." She said management has discussed the possibility of paring the menu down after a while. Not a restaurant insider by any means but this is not uncommon for new places to tweak their menu while trying to figure out what their identity/theme will be. Also she said management changes their minds on stuff frequently so who knows, maybe they'll add more menu items.
