its not about deciding. its about turnover of ingredients and dilution of skill/effort.

luckily they seem to have been thoughtful about it and most of the dishes appear to use common ingredients.

yeah, IF we have any tallgrass insiders on this board I would suggest to them that they send the word to maybe see what works and then cut that thing down by, like, 70%. the food portion of the menu should be on a single page in a single column. I want this place to work more than anyone that doesn't live in MHK or have money invested in it so I suggest this is good faith.

I haven't been on this blog much lately so I was not able to share this tidbit until now, which is that Brockette will be working at Tallgrass Taphouse this summer.  I already informed her that she may be expected to provide some insidery scoops if asked.  Regarding the menu size, about a week ago I was asking her what the menu was like and what was on it and she rattled off a whole bunch of items and I was like "Wow, that sounds like a big menu."  She said management has discussed the possibility of paring the menu down after a while.  Not a restaurant insider by any means but this is not uncommon for new places to tweak their menu while trying to figure out what their identity/theme will be.  Also she said management changes their minds on stuff frequently so who knows, maybe they'll add more menu items.
