I coach youth football, and have 3 middle school/ high school boys that we discuss both offensive and defensive adjustments to what the opposing team is doing with almost every game we watch. I want them to be able to play a video game that is a learning tool for reading defenses and for guessing how the offense has adjusted to what you are doing. Are either of these games like that? If so, which one?

Yep.  Add in something about how "at K-State we can't just write checks for those sorts of things like other schools can" and this could have come right out of the Tim Weiser play book.
