Omelets can be tough to get perfect. I mean, it is most likely that part of it is still runny or too dry and who knows if the cheese will be melted enough, unless you are using some crap oily processed cheese food.
If you like omelets, frittata are the way to go. Much easier to get exactly how you want it in pretty much every way.
omelettes aren't really that hard once you get the hang of it though... Need to fold / take off heat while it is still barely runny on the top and it will cook through as it rests for a minute.

It's a much nicer kitchen, and will be way easier to prep and cook in overall, but almost no high-rises in Chicago have gas stoves. My cast irons are heartbroken.

Takes forever to heat up, I basically have to cook everything on high. You have to physically remove the pan to get away from the heat, easy to overcook.

I should eat good breakfast more often and cut down on dinner.

I have been eating steel cut oats with an egg on top almost every morning for a while.I have made them overnight in crock pot on a couple of occasions: steel cut oats, H20, 1/2 and 1/2, salt, brown sugar, cinnamon and pecans. Fills your home with a lovely aroma in the morning and the oats give you the strength to do what needs to be done. They are good on the stovetop also.
It's pretty great. I cannot believe it took me so long to give steel cut oats a try but they are delicious and the texture is incred.
And a little tiny bit fills you up for HOURS on end.

English people are really good at breakfast. We stayed at this guest house where the hostess made breakfast to order: fresh fruit, granola, eggs, sausage, toast with tons of butter and jams washed down with oj and coffee. You can run on that for a long time. Really good way to begin the day.
That's not a traditional English breakfast.

You should consider the chia seeds. Excellent source of Omega-3 and fiber.
And magnesium. Today I saw a video that said magnesium relieves back pain and I noticed that I haven't had back pain for 2-3 weeks which kind of coincides with me adding chia seeds to my diet. I don't want to jump the gun but chia seeds might rock!

Cold oven to 425, then lower to 375 for 8 minutes. The tilt is why that bacon is cooked so uneven, Tom. My first time to be disappointed in you.This was thick cut which we have not dialed it in as well yet. Standard bacon is super crisp and even.
