gameday chips and cheese:

One block of velveeta (cubed)
One can of rotel (liquified)
Two chipotle chiles in adobo sauce (liquified with the rotel)
Some milk (to desired liquidness)
Add all ingredients to crock pot and set to "low" for about 5 hours
Go to town on the cheese with some Tostitos Cantina Style Tortilla Chips

Roast 8 poblanos
Roast 2 lbs of tomatillos
discard skins and food process

render 5 strips of bacon, remove and leave drippings.

Brown 3 lbs of pork butt cut into 1 inch cubes, salt and dredge with flour.  you'll have to work in batches for this, don't crowd the pan or they will not brown.  Set aside

dice 1 large onion and sautee in bacon fat and pork but left overs.

add finely chopped garlic 8 cloves

Add 1 can corn or roast and cut several ears.

Add 1 TB of cumin

Add 2 tsp mexican oregano

Add 4 cups chicken stock

Add tomatillo/poblano puree

Add pork butt.

simmer for as long as possible.

garnish with cilantro and cornbread.

no ge'ing, do you have a recipe?  I made one myself, but I'd be willing to see others work.

I've never made it, but I've had it and thought it was just ok.  If I were to make it I'd take the seasoned black beans, kind of mash them a little bit; not so it was a paste, but not so they were just individual beans. I'd then take cream cheese and get it to room temp, mix in some seasoning; maybe cumin and some chili chowder (or other maybe, cayenne) then stir in some raspberry chipotle sauce (my fave is broncin bobs), pour the cream cheese mixture on top, stick in the oven/broiler to heat everything, pour some of the bobs on top just before serving. Maybe top with some green onions.

I think seasoning the cream cheese would be a big improvement to the So Long/Lucha version.

Tonya Harding's El Dorado Egg Scrambo:

1 jalapeno pepper
1 green bell pepper
1 red bell pepper
1 onion
1 ripe tomato
6-8 red potatoes
5 eggs
1 cup shredded cheddar cheese

dice all pepers, onion and tomato. dice potato, toss in olive oil and season with salt, pepper and oregano over pan. add half of peppers, onion and tomato and bake for 10 minutes at 400 degrees.

scramble 5 eggs. add remaining peppers, onion and tomato to pan with cheddar cheese.

turn oven to broil for 3 additional minutes. take potato mix and dump over plate then dump the egg mix on top.

ENJOY!

The Ocean Below Us Hot & Spicy Party Dip

replace the cream cheese with parmesan
replace the black beans with lump crab
sub pickled jalapenos for the raspberry stuff
sub cream cheese for the cumin
add mayo, chopped onion + red bell pepper + bacon

bake at 350 for 40 mins and i think we're there
