Salsa Recipes ('clams cooking board topic)

I really want to make a corn and black bean salsa, but plz, list any recipes you like.  Also, I'm sick of Santitas and am looking for a new, unique store bought tortilla chip to try.  Any suggs?  OR, if anyone likes to make their own chips feel free to share your experience.

snyders are good and they are like not as bad for you as all the other ones or something. check them out.

I'm currently buying the whole grain tostios... :drool:

As for salsa, I've never tried to make black bean and corn.  But for regular:
3-4 tomatoes 
garlic
1 yellow onion (pulse in FP)

green onion
various peppers with seeds-you determine the flavor and hottness here-(pulse in FP; make it the just a little thicker than you want it)

lime juice
cayanne pepper chowder
onion chowder
cumin (this is key)
salt (to taste)
tsp sugar (also key)
cilantro  (pulse to corsely chop the cilantro and mix in the other stuff)

Allow to chill and flavors to marinate for a while, should keep for about 7-10 days, mabye longer if you have an elite fridge and keep it air tight.

2 cans mexican stewed tomatoes
1/2 small white onion
4 medium sized jalapeno
2 cloves of garlic
Juice of one lime
Clump of cilantro
1 can Mexicorn

Dump stewed tomatos, 1/2 onion, sliced jalapeno, galic cloves, cilantro leaves in a blender or food processor and get them good and chopped up and mixed. 

squeeze the lime in and add salt and pepper in as needed. 

Stir in a drained can or 3/4 can of mexicorn with spoon. 

STore in fridge for a few hours. 

Very quick and tasty.

a clove of garlic (still in its peel)

cilantro (about 1/3 a bunch you would buy at the store)

Broil the tomatoes until the skin starts to turn black.  Remove from oven.

If you have a gas stove: using tongs, char the jalapeños until the skin blisters.
If you don't: toast the jalapeños on an iron skillet until the skin blisters.
No iron skillet?: Toast the jalapeños in a toaster over until the skin blisters.
No toaster oven?: Broil jalapeños in oven until the skin blisters.

on same iron skillet, toast the garlic on both side, until just soft enough to mash (do not let it burn or it will taste very bitter) [the paper on the garlic is important to prevent this).  Once toasted enough, remove skin (should just fall off)

Use a potato masher or possibly the bottom of a coffee mug, smash the garlic into the tomatoes, and then smash the jalapeños in as well.
(you can also use an immersion blender or food processor, but on lowest speed and only like 3 short pulses)

finely chop the onion and cilantro and add it to the tomato, garlic, jalapeño mixture (having let it cool for about 15 min).

salt to taste (will probably take more than you think)
done.

when all else fails when making salsa, think simple, simple, simple.

I make one similar to ching's that gets good reviews.  It's all about good tomatoes and keeping it simple.

also I try to get as many seeds out as possible (tomato) bc if there are a lot it makes it bitter if you food process it.
