I simmer in beer and onions for a couple hours and then brown them on the grill. They are cooked when they go on the grill.

They are cooked when they go on the grill.this is best way I've found to cook brats. i don't cook them in onions/peppers and beer for hours but a good 30-45 minutes. like cire said, that way they're basically cooked by the time they hit your grill and you're really only browning them on the grill. it helps you avoid the grease fire drama and tastes great.
