Got it, I misunderstood.  Aside from fish, you can also cold smoke cheese.

whats the time like on both?

Really, anything after an hour isn't going to do much. The food can only take on so much smoke flavor.

You can also cold smoke fresh pork side and make your own bacon so you can cut it as thick or thin as you'd like.

Chili cook-offs are always disappointing. Everyone tries to be all crazy and wild to make their chili unique and usually it ends up tasting horrible.

I made a big ol batch of chili for the Super Bowl one year, loosely following Alton Brown's recipe.  God, that chili was terrible.  Just rough ridin' atrocious.

sorry AJ, gotta run my smoker as long as i can. Trying whole chicken, thighs, and sausages tomorrow.

Chili sounds great though.

1 lb of tomatillos roasted.

4 annaheim(?) or pablano roasted/seeded.

2 japs roasted/seeded.

2 onions

5 cloves garlic

4 cups chicken stock

2 lbs pork butt/steaks diced and trimmed.

can of corn

can of pinto beans

dredge and brown diced pork set aside.

sautee onion garlic.

roast peppers (dice or blend) and 'tillos peel and add to onion with stock.

add pork simmer for 3 hours.


Serve over cornbread/corn chips.


delicious.
