my parents store beef at a butcher in their giant freezer. we can just go into the freezer area and take out whatever we want, and keep the house freezer full. we also give our cowboys a half beef a year (maybe a full beef now, not sure) as part of their compensation package (obviously don't call it compensation package, probably call it something more country and western).

Our friends buy a whole cow at a time and deep freeze a bunch of it at a time. Looks like fun. His meat tastes good, so it’s obviously a great idea. :fatty:

I probably should mentioned that have discussed splitting a side of beef from my family cow farm with a couple friends out here and taking a road trip with it from Kansas to California but it never has materialized. It definitely isn't cost efficient when you do it that way

1/2 a cow is somewhere around 200-250 lbs of meat depending on the cow.  And yes, all cuts cost the same.  For instance, when we butcher some farm cows, my dad isn't trying to make a profit so i end up paying $2.50-$3.00/lb.  I generally get hamburger, ribeyes, skirt, flank, roasts, brisket.  I always go with a 1/4 or a little more cow though.  100-150 lbs is plenty to last my family of 4 a year.  If you don't have your own cows, look at double that cost probably.  You may pay more for hamburger or chuck roasts, but significantly less for steaks, brisket, etc..

My parents have so much ground beef it’s coming out of their ears and noses and freezer. In college I used to get aggravated because they’d send me back to manhattan with a giant cooler full of it every time and then bring some with them when they came up for games and stuff.

They also donate beef for all the school events and church fundraisers and crap. I’m sure there is farm mafia tax write off crime going on at extreme levels.

does the “frozen” beef taste deteriorate over time?

No. Also, we get a McGonigals Steak package every Christmas from the in laws and it’s Fantastic. I try to spread it out over 6 months. It’s hard to do because I want to eat it all right away, but it always tastes great whenever I pull it out.

Everyone, just buy a cheap ass freezer that gets down below 0 and call it good.  I've eaten nothing but farm raised beef my entire life and can say don't worry.

Oh it was not a logical plan to get cheap beef. I think with the family discount it would be possible to break even relative to local but it would be more about the trip than anything. Still might happen someday though!

there’s absolutely no way that small mom and pop shops can raise quality steaks as well as the larger feedlots
so why buy from frank the farmer who sells Sirloin Stockade?

It’s not as sexy to say you have a whole pig in the freezer I imagine, but pork is awfully tasty too.

Ah, 1/2 a cow seems like way too much cow per year. It gets you the expensive cuts cheap tho right?

Usually costs around 5-6 bucks per pound.  You lose about 40% of the cattle's weight when you butcher a beef.  This is due to removal of internal organs, bones, head, tail and hooves.  Plus some of the fat is gristle which is uneatable.   So when you think you're getting lots of meat, it's not as much as you think.  Also the hamburger is usually mixed meat from other beefs they are butchering at the time, due to that it is comprised of trimmings and pieces.

Can relate.  Even when i lived in Wisconsin my dad would bring a huge cooler of hamburger and steaks every time they visited.  And it was an hour long story of how they stopped in some podunk town in iowa to get more ice to keep it frozen.

I can't begin to tell you how many hundreds of pounds of NOT FOR SALE hamburger I've eaten in my lifetime.
