my wife is suddenly very interested in this.  I think it seems like a good idea too.

Quarter or half cut up how you want.  Some of their cows will be on our grass this summer.  We've been getting beef from them for years.

Is it true that if you don't "use it" you "lose it"?

After 18 months to 2 years, yep.  Freezer burn will eventually set in.  I've heard some say a year, but I've never had any go bad after a year.

Back when my farmer grandparents were still farming my dad used to bring back a barrel(?) of frozen beef almost every time we went out there. These were not metal barrels but some sort of rigid cardboard barrel that you would throw a plastic trash bag on the inside then fill it with frozen beef and it would still be semi frozen 6 hrs later when you got back to KC.

Looked like this but instead of a metal top it was a top that was made of the same cardboard material.
