i was going to ask if they were lahmacuns, but the crust looked thicker than i recall them.  how did your family incorporate them into your thanksgiving tradition (detroit/dearborn thing?)?

More consistent cook time for white & dark meat along with ~1/2 the cook time.  Really no reason not to spatchcock a turkey unless you are actively trying to make the cook last longer to avoid family.

Have no idea.  Was like 7 years ago that it was sealed with an acrylic sealer and have not had any issues.
