You see that SOB in my pic? About 1 minute per side. It is a frantic dance of near disastor to flip and get the toppings on before it turns to a fireball. I am going to try direct heat on the first side to bubble it up and then flip onto the other side of the grill with no heat next time I do it to more slowly finish it (about 5 minutes I would imagine).

No slow cooking allowed. Through the dough on the grill, once you can flip it, you do. Then throw toppings on it and keep it in there until cheese melts. Don't let it get too hot or it will burn.

It gets pretty wild. Took me about 7 tries before I got the right combo of heat, dough thickness, and dough size.

asava, throw out everything you knew about cooking when it comes to pizza. you want to cook it as fast as possible, it's all about what's happening as the dough cooks.

I may or may not have eaten a Big Italy pizza from Pizza Hut in 1 sitting not to long ago. Wasn't very good.

The Gorilla Challenge might be right up your alley. Wheat State Pizza, locations in Derby, Pittsburg, Emporia, KCK, Lawrence, etc.
