some (most) of the non-dragon zombies don't have some (most) muscles, but their limbs still work.  also, the night king should have more zombie animals - bears, wolves, moose, mastodons or whatever mance rayder's elephants were.

Well maybe he left soon enough that he catches up with Euron before he would have to turn off* and then Theon discovers that he isn't going to the Iron Islands after all.

The iron islands are off the west coast of the continent and the Golden Company is across the narrow sea to the east.
