i think its because i saw and smelled the raw chicken meat spattered on the walls too often at the old manhattan meat company (rip)

If the quality of the beef is top notch temperature of the burger doesn't matter because it's safe.  I order my burgers at the Brew medium rare every time. SO DELICIOUS!
