I'm glad you asked because I wondered too! From the Grammy FAQ:

For the 59th Annual GRAMMY Awards, albums must be released between Oct. 1, 2015 and Sept. 30, 2016.

So it's based on when the album is released and not the single. Adele's 25 was released during that timeframe and it also explains how Hotline Bling, a song so old it's bordering on Old Skool Jamz status was still eligible to win awards too.
