queso-
brown ground beef (or other meat if you prefer) and add taco/mexi type seasonings
add meat, velveeta, cream cheese, and rotel-set on low, stir occasionally (but keep and eye on it, the cheese product can curdle and get nasty if you let it go too long)

if you brown the meat first -roasts and whatnot...cooking in a crock pot isn't too shabby.

pulled pork- 2 lb pork shoulder, season with whatever you prefer; let sit a few ticks, brown seasoned meat in a lightly oiled pan (yes this will require some work-holding the roast there in different positions while the side touching the pan browns), put in crock pot on a bed of sliced onions, add 1 can of root beer.  Set on low for 4-6 hrs, remove from crock pot, shred, return to crock pot with a little bit of the leftover cooking liquid and your favorite BBQ sauce.

Why do you hate the crock pot so bad?  :dunno:
I mean, it's perfect if you like wasting energy and time and draining your food of moisture and nutrients and flavor...or if, like I said, you just need to keep your food warm for an extended period of time.

Actually is great for my time and energy, i just set it and forget it.  When you pull the meat and sir in the juices its great and flavorful.  :dunno:
Maybe your crockpot is bad?  Maybe you leave the lid off?  Seasoning enough?

We do a simliar one for tortilla's:
3 boneless chicken breasts
1 pack of fajita or taco seasoning
1/2 cup of chicken stock- sure
salt
pepper
siracha
1 can of rotel hot
2 jalapeno
1 pound of stew beef
1 chopped onion
1 can of black beans
1 cup of frozen corn
Half a jar of salsa

When you get hom from work, stir it all up to shred the chicken.  Toss it on a tortilla with a little cheese and top with sour cream, salsa, or whatever you like the best.

I don't prepare tailgate food. too many friends/family already have huge tailgates.  I just go to theirs.  :dunno:

This is one I've made recently.   If your a blue cheese fan,

Bacon Blue Spinach-Artichoke Dip

4 slices bacon
1 cup sweet onion, coarsely chopped (1 large)
2 14 ounce cans - artichoke hearts, drained and coarsely chopped
1 10 ounce box - frozen chopped spinach, thawed and well drained
1 cup chopped red sweet pepper
1 cup light mayonnaise dressing (do not use regular mayonnaise)
8 ounces cream cheese, cut up
4 ounces blue cheese, crumbled  (we got a pretty bold blue cheese and it wasn't completely overpowering)
3 cloves garlic, minced
1/2 teaspoon dry mustard

That said, I am not a fan of pretty much other then chuckroast or cheese dip from a crockpot.

Chuck roast is legit, though:
Chuck roast
Zesty Italian dressing packet
Ranch dressing packet
Mushroom gravy packet
Half cup water

Put roast in crock
mix other stuff together and pour on top.

It isn't fine dining, but it is good.

I take the roast and make melt sandwiches
 - Rye
 - aged swiss
 - Carmelized red onion
 - gravy from crock
 put sandwich together and grill in skillet like grilled cheese.

The sandwich is pretty fantastic.
Leave it alone for like 6 hrs.

I've had a couple of DrP pulled pork dishes, but none compares to that recipe.   Makes fantastic enchiladas.

The chuck roast deal is good....just did one last week with beef stock and french onion soup.
