so the emphasis is on "all", as if to differentiate it from people who say "gonna win some of em!"

I thought the phrase was the opposite of the well known phrase "can't win em all!" in which case you would put the emphasis on "gonna" to differentiate it from "can't". but "GONNA win em all!" sounds way wrong

For me, it really depends on my mood, but trying to emphasize "'em" is virtually impossible.
