Tony is trained in French cuisine, habibi. Their old pastry chef (Alan) was an actual authentic Parisian who wandered wichita drinking red wine and making oddly charming lewd comments to women in his off-hours before a lifetime of having la petite mort as a raison d'etre finally left too many flowers in his spleen.

Fatty had a pretty funny Lebanese joke.

In Davis, where fatty's family lives the water is bad so almost everyone gets these big bottles of water to drink.  Every strip mall and grocery has a water place.  Outside every business is this ridiculous California inspection permit that supposedly vouches for the quality of the water.  I don't remember the guy's name, but he was Lebanese and they called him something funny like "Sammy."

So fatty gets out there, sees this racket and tells Baba who then retold me the same story in his funny Baba way:

"Shwan said to me: 'Baba, Sammy cheating you!  Where he get water?  From same place!  Then he mark it up and sell it.' [Then he says as an aside] you know Sammy Lebanese.  Cheaters."

the lebanese in mexico city make great tacos orientales/tacos arabes.  chinese coffee for breakfast, tacos arabes for lunch and sucking down calimochos (mexican, not spanish) for dinner is a great mexico city day.
