official hashbrowns thread
« on: October 09, 2011, 09:40:38 AM »
just fantastic. but how can baked potatoes just suck so hard while hashbrowns are so great? i don't understand it either. seems they should be similar but they are not even close. one is disgusting and the other is magical.

least favorite but still fantastic-cubed/diced hasbrowns. these will sometimes be called potatoes obrien and you'll think you'll be getting a bunch of peppers and onions in the bag when in reality there is like hardly any.

second favorite is the hasbrown potato patty. you might say gross but i say fantastic. one great big tator tot and i can eat it for breakfast you say? smashing i say. great job.

first favorite is the below. what do you call this type? i don't really know. i think they are just hashbrowns and if you want a different kind like the cubed or patty then you specify that but when you just want these you just say hashbrowns. they are very good.

so there you have it. there's my top 3. feel free to weigh in or add different hashbrown varieties that i might not have discussed that you know about. toppings on hashbrowns and other hashbrown related things can be discussed as well.

I agree with your ranking.

The shredded kind (your and my #1) is tough to make at home, IMO.  I can never get them perfectly crisped.  The greasy spoon type places that have a well seasoned cook top are the best.

I think they are just small potatoes cut down the middle into silver dollar sized pieces and fried.  Pretty rare.

like the chef's potatoes? my opinion would probably be that those are homestyle potatoes or breakfast potatoes and not hashbrowns. we could probably go around and around for forever about this though. anybody else want to weigh in?

hashbrowns require catsup. no exceptions.

I think Steve Dave might be describing tator-tots, which some shady places try and pass off as "hash browns"

good timing on this thread. just made hashbrowns this morning, obviously with cajun seasoning, pepper, and sriracha.

*Pro TiP* - use a lot of butter, don't flip them for a long time.  as dlew said - pepper pepper and MORE  pepper.  you can make shredded ones by using your food processor.  i'm partial to potatoes o'brian.  key here is using enough butter and not flipping.  trust me.  i make the best. usually.

not to take away from your thread, but more as an addition to it:  I had cheese grits with gouda last weekend while I was in kentucky. Those are a real treasure.

If you shred up your own tators, you gotta (gotta!) wring em out in a dish towel.  Also, tons of pepper and some tabasco.  Ketchup can eat a dick as far as I'm concerned.
