I did a cruise a while back from Italy to Greece and Croatia.  I don't think you can go wrong.  Dubrovnik was the highlight of the trip but I can't vouch for more of Croatia than that.  Venice is cool and unique.  The Greece that I did was just sitting on a beach drinking beer and eating seafood which was also great, but I'll need to go back at some point to see the historical sites.

It depends on what you like to do. Italy and Greece are probably better for seeing history. Spain and Croatia are probably better for relaxing.
