Using course Kosher salt and course black pepper makes grabbing a pinch much easier. Imo course salt also tastes batter.

At the Nicname house, we don’t even use salt or pepper shakers. Just grab a pinch from a ramekin and sprinkle on our food. Much more efficient and fun!

Oven bacon is fantastic and far superior to all bacon unless you like to burn the crap out of your bacon. Then, it doesn’t matter, just burn your bacon however you like.

I've tried oven bacon and don't think it's as good as a skillet. Do you use a rack or no?
I just do it directly on a sheet pan. The trick is to put it in a cold oven and bring it up to temp. The thing is that whether you do stovetop or oven you’re still frying the bacon (cooking in its own fat). Oven just allows you to do more at once, cook more evenly, and reduce the risk of burning.

I found a boiled egg timer last year. Never knew they existed before. It’s a little thing you put in with the eggs that tells you when they are soft, med, hard boiled. Game changer. Jammy eggs 24/7 perfectly.  :surprised:

pretty sad i'm even having to mention this but if you're worried about cleanup with oven bacon then just line your sheet pan with aluminum foil first. Also makes it easier to drain the grease if you keep your bacon grease (which you absolutely should, #COOKINGHACK)

I eat a lot of eggs for breakfast. I just crack them let it cook and slide it off the pan. Rarely have to clean the pan or use a wooden spoon. Easy and quick

As someone who cooks bacon almost every day for breakfast I am firmly on team Skillet. Throw 2 slices of bacon on the skillet at medium low heat, jump in the shower, flip the bacon, dry off and its pretty much done.

When frying unbattered things that need to be extra crispy like vegetables, try frying twice.  Fry once and remove and let sit for 10-15 minutes then dab with paper towel to get more water off.  Then back into oil to fry again.

Onions, shallots, french fries, hash browns, etc.

I just look at shallots as small onions. Been using them a lot more lately when I don't want to use a whole onion or have half an onion sitting around. They're maybe a little more pungent but when cooked or macerated there's not a huge difference

Made waffles for the kids this morning and noticed that Bisquick changed their waffle/pancake instructions to be exactly the same for both foods. They used to have a slightly different set of instructions for making waffle batter (more milk, basically). I couldn't tell much of a difference in the final product.

Just consumed the best leftover pizza I've ever had:
1. Heat pellet grill to 400F
2. Place pizza to be re-warmed on a sheet of aluminum foil on the grill.
3. Reheat for 10 minutes.
This is the best pizza reheating method that I've tried.

I have read and semi-confirmed that the best way to quickly heat up a slice or two to it’s near original form is to put it in a pan over medium to medium high heat for a couple minutes then toss a small splash of water in there and cover to steam it the rest of the way.

I'm not sure I've ever heard of fish sauce. From the descriptions of it though it makes sense because I have a very refined pallet that doesn't waste my time with bad tasting food.

Scrambled Eggs; Use cream cheese instead of milk. Milk waters down the taste, cream cheese boosts the taste!

I do this amazing cooking hack but with greek yogurt. Everyone always says "wow Stevesie, these are the best scrambled eggs I've ever had!" so I know they're good.

Most salsa on the store shelves is absolute garbage. A lot of homemade salsa is, too, but it's really hard to find good salsa that isn't homemade.

I knew that one would ruffle some feathers.

We always get the MEMBERS MARK FRESH SALSA©. I've made salsa a couple times and it tasted almost exactly like the MEMBERS MARK FRESH SALSA© only slightly worse. Thus, it's appearance on the list.

If you really like spicy things and want your own blend I could see how homemade salsa would be important.

I also wonder if _33 has ever made eggnog. I’ve done a couple different recipes and none take more than 15 minutes in the kitchen. (Although my favorite is aged eggnog that’s been sitting in the fridge since Halloween).
