I'm thankful for the qatz, Paks w/ Clams, Ms. wacky, Puni's lunch thread, a real job (finally! Thanks Michigancat for the help), this blog, cheesy potatoes, cheesy corn, cheese in general, and puppies.

Happy Thanksgiving from Renoland - ice hole of Kansas.  Glad I am not travelling.  Headed to my cousin's in Hutchinson to get bloated.  Hope I don't get constipated again this year, dang cheese trey!!!  Thank you all for letting me post and to have an outlet for my the hemisphere of my brain warped by my environment and global warming.   I love sweet taters and anything with gravy.

I prefer the mid afternoon meal. Like 2 or 3. Noon i'm not hungry enough to truly gorge, 6 there's no proper rest on the couch with uncles and here them talk about politics and football while half sleeping in a food/wine coma.

Seriously watching the Cowboys and napping with old smelly uncles is one of my favorite holiday traditions.

my mom dialed it back a bit this year and farmed out the carbs and desserts

turkey
stuffing
biscuits (bourbon and baker)
fried corn
fried apples
mashed potatoes
squash
green beans

dessert:

Modern family here. Mom wants to face time with the kids as we prepare food tomorrow. Talked about a Zoom Thanksgiving tomorrow, but the family agreed to do a video call on Friday instead. I'm assuming that's facetime?

I am about to cook a turkey. It has been brining for two days and I'm trying spatchcocking a turkey for the first time.

Wife is working at the ICU. Going to have an outdoor lunch with another dad whose wife is also working in an ICU and our kids. It should be a nice relaxing day.

Friends are dropping off food for ms ww and I. Having a newborn has many perks. Then probably facetiming our parents.
What a weird year.

Modern family here. Mom wants to face time with the kids as we prepare food tomorrow. Talked about a Zoom Thanksgiving tomorrow, but the family agreed to do a video call on Friday instead. I'm assuming that's facetime?

yeah between iPhones. Have a zoom call here in an hour and then some other sort of video call tonight.

Just tasted weird. I mistakenly got a kosher turkey that was salted already and I think that messed with it even though I tried to use less salt. Texture was good.

If i'm being honest, all gravy is pretty gross. I mean, its fine I guess, but it just seems completely unnecessary. Even the word gravy is pretty gross.

We did my half of the fams thanksgiving this past sunday and they asked me to do the meat I said sure but I'm not doing turkey or ham. Beef brisket, pork tenderloin and smoked chicken. Because eff having basically the same meal like 3 times within a week

Same. I'm going to make turkey soup this year with leftovers. I also smoke a whole or half ham every holiday. Then I strip it and take the bone and simmer for a couple of hours to make a broth for amazing ham bone soup. Its delish.

More consistent cook time for white & dark meat along with ~1/2 the cook time.  Really no reason not to spatchcock a turkey unless you are actively trying to make the cook last longer to avoid family.

Have no idea.  Was like 7 years ago that it was sealed with an acrylic sealer and have not had any issues.

How many pounds is that beast?

I fried a 14 pounder today, probably my best frying effort yet, not gonna use peppercorns in the brine ever again tho, it took half an hour to get most of them out of the cavity before I fried it, eventually gave up.

I'm doing the Samin Nosrat buttermilk turkey today. I didn't have great results before but I got a turkey that wasn't pre-salted this time so we'll see
It was pretty good. Took way longer to cook than it expected though

Conducted my own straw poll over the holiday. I do think "stuffing" is a Midwestern thing, and it's what I always called it growing up. But if you're not actually stuffing it in the bird (and you should not, for reasons great and small), then why call it stuffing? I've come to the conclusion that "dressing" is the appropriate term when prepared in a casserole style. It's been a real mental battle for me, but it's a struggle I must endure, as I am charged with making the dressing every year.

I have slowly taken over more and more cooking from my parents' generation. This year in charge of making the turkey, gravy, dressing, sweet potatoes, mac n chee, and pumpkin pie. Fun but a lot of work. Turkey is brined and resting in the fridge, i'll prep it tonight. I'll get up early to make the mac, might make the sweet pots before bed tonight.

It's never been part of my family's side dishes so I don't consider it a T'day side but I would definitely go to town on some mac and cheese if it was there.

Check out that fine gold rimmed china or whatever that I inherited from a grandparent and bust out around once a year. I've got a full set of that with gravy boats, small plates, platters etc etc for 12 people. Stupid grandparents should of just put that money in an Index fund, what were they thinking?!

Dry-brined, spatchcocked, smoke tomorrow.  A work customer gives me a 50 lb sack of Idaho spuds every Nov.  Huge pot of mashed taters incoming followed by a month of whatever potato food we can dream up.  And of course the family tradition sour cream raisin pie made this evening.  The meringue turned out :love: this year.  Wife and kids hate it, so I eat it by myself all weekend.

Wet brine, spatchcock turkey on Traeger. I always stress over it not getting done, which means it will be cooked by 10.  Amana bone in ham as backup alternative.

I finally grew up and carved without that dumb electric knife thing my dad always used and I thought you had to use. Way better carving outcome.

Yeah just need a sharp knife but a 12-14 in carving knife is the best and worth it

Had leftover ham with eggs this morning.

All the leftover sides with a ribeye this evening.

Two solid meals today.

3 Thanksgiving meals down, zero turkey had.

Thanksgiving 1: Ribeyes
Thanksgiving 2: Sausage and brisket
Thanksgiving 3: Duck

And all of them had the normal Thanksgiving sides.

Do you think turkey is served at 50% of Thanksgivings celebrations 10 years from now? Seems like more and more families are skipping it.

I think the younger generations will bring it back because they seem to know more about cooking. I saw a ton of spatchcocked turkeys on IG friendsgivings which imo is a sign that younger folks are cooking better turkey than their parents and makes me think it isn't going away too soon

I think it will go away as our younger generation seems to be a much more honest group than previous generations.  they’re willing to admit that turkey is not good and they instead will eat food that tastes good.

The reason a lot of people hate turkey is because their mom just plopped one in the oven and cooked the taste right out of it.

Agree with everything here. For a lot of folks turkey is not worth the effort it takes to make it taste good, and that's ok!

We rotate who hosts.  Probably 20 years ago i took the chance and went prime rib instead of turkey. My dad loved it.  Mom muttered it just wasn't traditional. The older relatives ate it up.  We also do "to go" boxes for everyone. Not an ounce of beef left when it came time to divide it all up.

Now we've come full circle working ham and turkey back in.

This is correct. We smoked two turkeys, a ham and did a roast in the slow cooker. Had leftover turkey but turkey tetrazzini, turkey noodle soup and turkey sandwiches took care of that. All we have left now is cranberry salad.

This. One of the things about the boomers is they were raised to prefer convenience as the most important factor in meal prep, the younger generation seems to enjoy the process much more.

It's not nuts. In the 60s the idea of not having to spend all day in the kitchen was seen as liberation. I think younger folks are realizing there's lots of creativity and satisfaction from doing that work.

Dry brining and spatchcocking a turkey doesn't even take that much work. Just need to plan when to buy and salt and have some poultry shears
