I think rare is pretty dumb. Medium rare to medium is pretty delish. My dad raised me on his medium well to well done steaks because my mom is one of those people who are afraid of pink meat. :yuck:

Friend of mine's parents had a cow butchered when we were in school. The butcher accidentally ground up the ribeyes. Fantastic burgers. Amazing.

pro-tip-- that was regular ground beef. the butcher kept the steaks.

Lots of places/people use high quality cuts to make burgers. They just use the scraps left over after cutting the steaks into individual portions.

I do believe hamburgers and steaks have different internal temperatures in regards to how they are cooked. A medium rare hamburger should not be bloody/soggy.

If you have a butcher grind up the meat specifically for you or the restaurant does this, a medium rare to medium burger is acceptable. (I don't care for them though.) I would never order/cook a burger under medium well otherwise. One pound of ground beef can contain meat from 200 different cows, so I don't like those odds.

I just know that the guy who ordered it well done has poor taste, and I won't trust any food recommendation he gives me in the future. "Hey Saul, you should try XXXX restaurant its great!" mental note, well done steak guy, avoid XXXX restaurant at all costs.

Yeah, I enjoyed it. Some pretty fun combinations for tacos. Definitely smaller servings, though. Esquina for lunch, Burger Stand for dinner, that's what I always say.

Stated earlier supermarket hamburger can contain meat from 200 different animals plus some of the packing plants are washing it with chlorine to kill the resistant ecoli. :sdeek: :barf:

I have had burgers made from 1/3 piggy and 2/3 beef. They had a good texture but obviously you need to cook them well done.

Made some fantastic steak for tacos last night:
Sirloin with sea salt and lots of chilli chowder on one side. Onion salt, cumin, and cilantro on the other side. Let it sit for 15min then seared it and cooked to medium on the grill.
Was muy fantastico! Made some excellente tacos.

Hey knuckledraggers, I have a nice cave with a fire pit available in a nice part of town. Has some broken pottery strewn about, but the protection from saber-tooth cats is excellent.
