the "kind" in the jar is a completely different product (like heinz mustard vs heinz ketchup)

I do when I make my own food. I don't see the point in salting already salty premade food. Worse is salting already salty restaurant food. Saw a 350 pound tuck salting some chili-cheese curly fries at Bogey's in Hutch last night.

I add pepper to a lot of foods. Not like precooked, microwave stuff but like salads and stuff. Buying pepper and sea salt grinders really improved my home food prep. Need to try some of the boutique finishing salts, smoked sea salt sounds pretty damn tasty.

Tried it from scratch once with some eggs, olive oil, lemon juice and dijon mustard. Texture was perfect but it tasted totally wrong. Prolly need to emulsify more olive oil next time. Words of warning, folks.

When you think condiments you gotta think about sandwiches. Sure Sirachi, or some other thing might taste great sauced onto some crap you are eating but it ain't gonna liven up a dry turkey sandwich. Unless you just don't like the taste of mayo it has to be number 1. Mustard (regardless of kind) is prob number two but is more powerful in flavor making it less versatile.

And you don't need a food processor or blender to make it. You can turn the garlic into paste by dicing finely and working it with the flat face of the knife with some salt to help break it down. then you just whip the ingredients in a bowl while slowly adding the oil to imulsify it.
Trust me....i'm a doctor.

Sometimes I'll marinate my hot sauce in hot sauce and then baste it with hot sauce before putting it in the oven. Eat while still hot with a side of hot sauce if you want to spice things up a little.
