Delicious. I have heard that there is a sriracha paste thats even better. Found in a peanut butter type jar with a green lid.

I have both in my cabinet right now.  The canned stuff is just a chunky garlic chili sauce.   The main ingredients in both are chillies, garlic, salt, sugar, and vinegar.  :dunno:

I do when I make my own food. I don't see the point in salting already salty premade food.  Worse is salting already salty restaurant food.  Saw a 350 pound tuck salting some chili-cheese curly fries at Bogey's in Hutch last night.

I add pepper to a lot of foods.  Not like precooked, microwave stuff but like salads and stuff.  Buying pepper and sea salt grinders really improved my home food prep.  Need to try some of the boutique finishing salts, smoked sea salt sounds pretty damn tasty.

Local joint her has a honey aioli that has made me decide to look up how to make aioli.

Fantastic.
Tried it from scratch once with some eggs, olive oil, lemon juice and dijon mustard. Texture was perfect but it tasted totally wrong. Prolly need to emulsify more olive oil next time. Words of warning, folks.

When you think condiments you gotta think about sandwiches.  Sure Sirachi, or some other thing might taste great sauced onto some crap you are eating but it ain't gonna liven up a dry turkey sandwich.  Unless you just don't like the taste of mayo it has to be number 1. Mustard (regardless of kind) is prob number two but is more powerful in flavor making it less versatile.

That's interesting to me because I condiment my dry turkey sandwiches with sriracha and spicy mustard.

aioli is simple to make, just like mayo.  you need a food processor though.  is that weird? i don't think so since aioli is nothing but flavored mayo with garlic added.
Traditionally aioli is made with olive oil, eggs, garlic and a bit of dijon mustard with lemon juice as an imulsifying agent. May doesn't use the garlic or dijon.

And you don't need a food processor or blender to make it. You can turn the garlic into paste by dicing finely and working it with the flat face of the knife with some salt to help break it down. then you just whip the ingredients in a bowl while slowly adding the oil to imulsify it.

Look, if there's one thing i know how to spot on the internet, it's a blender using mayo making rube. So how about you sit down and enjoy your Swanson microwave dinner and shasta diet coke and let the real imulsified sauce making elites talk some game. Not a blender, a food processor.  Every person on Food Network uses a food processor to make emulsions, why wouldn't I?  I just assumed Mario Batali knows what the eff he's doing.  Guess I should be taking culinary advice from this eurocat fellow who posts on a KSU bbs?

Sometimes I'll marinate my hot sauce in hot sauce and then baste it with hot sauce before putting it in the oven.  Eat while still hot with a side of hot sauce if you want to spice things up a little.
