i've never ever had sriracha or whatever it is.
Neither have I, but when I was at the store the other day I decided to try some as it seemed to be something I would enjoy.  They were sold the eff out.

Not a blender, a food processor.  Every person on Food Network uses a food processor to make emulsions, why wouldn't I?  I just assumed Mario Batali knows what the eff he's doing.  Guess I should be taking culinary advice from this eurocat fellow who posts on a KSU bbs?

EuroCat, if you want to trade culinary barbs with pissclams, you better make sure your shuns are sharpened.

Wanna say it's the lecithin in the eggs that is the emulsifier.

BTW- like 90% of my food chemistry knowledge comes from Alton Brown.  Dude seems to know what he's talking about.

That is correct I believe. I was referring to Eurocat saying the lemon juice was the emulsifier.

That's freaking cool.  $37.50 for admission and a signed copy of his newest book.  Might just have to mosey on up there.

Quick google search:

Quote
"Emulsify means combining two liquids together which normally don't mix easily. The ingredients are usually oil or a fat like olive oil or egg yolks, and another liquid like water or broth. Acidic liquids like lemon juice help the process by changing the pH of the mixture."

so it's both i guess :dunno:
