all this nacho talk has me craving for some f*cking nachos.  here is what i have been chomping on the past few weeks, it's what cox bros made, but i'm not sure many ppl know of this treat:

layer 1 - chips
layer 2 - pulled pork
layer 3 - bbq sauce (your choice)
layer 4 - shredded cheese

repeat once more, or two if you are feeling bold.  can also substitute pulled pork for nothing if too lazy.  put in oven at like no more than 250 degrees, for like 7-8 minutes or so, then enjoy.  have not tried any other combination.

please share more sick nacho recipes.

Love nachos.  Would also request in this thread that people post their best nacho cheese sauce recipes.  TIA.  Also, if you are ever in Vegas, go to the rest. called Diablos between Monte Carlo and NY NY.  They have fantastic nachos.  Don't have any great recipes to add to this thread though  :-[

   frozen chopped spinach
   chicken bouillon

what if you took your favorite chipotle burrito, chopped it all up, and put that on top of chips?

or would that just be a taco.

It would be kinda like a taco salad without the lettuce.  Pretty tasty I bet.  Would have to add extra sauce for the chips though.

i love this thread.

first thing's first when you're talking nachos- you need a food processor.  sounds weird, i know, right?  hot rotel into the processor, chop it up, opens the heat and the taste.  pour that over your diced imitation velveta (USE IMITATION, it melts better)  the name is "nice & cheesy".  meat, whatever.  crab.  costco.  chips?  grab the ones at world market, they're thin.  none of this eating a shingle sh*t.  frack.  i wish chipolte had good chips, might need to walk over there now.


Cheesy Mustache QB might make an appearance.

go ahead and make fun, i can take it.

I've eaten tons of those.  Nothing wrong with those.  But my minor problem with the shredded cheese is it's stringy melted'ness.  Nacho cheese has a fantastic dip/scoop'ability that makes it fantastic.
