I smoke on a big green egg (great smoker). Today I smoked a 14.5 lb turkey at about 250 for 5 hours. Smoked with hickory wood today. Yesterday I did ribs for about 3 hours at 220 with apple wood chips. Man it was good.

Had a turkey that was marinated all night in a trash bag with 2 gallons of water, 1 cup of salt, one cup of brown sugar, sliced oranges and lemons and various other herbs and spices.

It was fantastic.

It's really nothing like an oven baked turkey.  The texture/moistness, is exactly like a fried turkey.
