Trimming up a tenderloin this evening. Welcome any advice on what to do with the trimmings. I saw an Alton Brown recipe for using the chain to make cheesesteaks. I don’t have a meat grinder or much desire to make burgers.
i’ve not decided yet if i want to smoke it and then sear on the grill or just oven then sear in butter/herbs. probably the latter.
